Just thought I'd share a quick recipe with you all. I had the urge for a raspberry pie a couple of days ago. I just ran it through the nutrition tracker and it is lower calorie than I thought. I used a store bought refrigerated unroll pie crust 73 calories (1/8 crust), 4 cups of raspberries (32 calories for 1/8), 1/3 cup corn starch (12 cal for 1/8), Splenda 1 cup and lemon juice from 1 fruit. Total around 120 calories. I just tossed everything together and baked at 400 degrees for 35 minutes. I guess I could make any single crust fruit pie for under 150 calories. No it's not as good as Baker's Square but then it is no where near the calories of "real homemade pie". Without taking insulin I would be passed out from the carb load in a piece of frosted cake or really sweet pie. It is still holding up well in the refrigerator. Tri

I would use a mini graham cracker crust, a premade phylo shell or a wonton wrap cooked in a muffin pan and put a Hunts nsa Snack Pack pudding into it. If you cool it in the refrigerator the pudding cups get more solid. That wouldn't be too many calories, it would be quick and there would be no leftovers to tempt you. If I made a whole 9 inch chocolate pie it would weep and get soggy over the course of a week. I see all kinds of "protein and pudding" pie recipes available too. I've never made one because I have to keep my protein levels low for my diabetic kidney function. I like to eat desserts made with fat free cheese, fruit, veggies and whole fiber starches. They still look and taste sort of like desserts but don't give me the problems of granulated sugar, high fructose corn syrup and refined flour. I have made a baked chocolate cheesecake by substituting the corn starch with cocoa powder...not bad for fat free cheese etc. The way I look at it, I can eat 1/2 cup of fat free cottage cheese or a slice of chocolate cheesecake! I have used cooled nsa Snack Pack pudding cups for frosting on a nsa chocolate zucchini muffin that will knock your socks off. For the rest of our lives we have to watch it or regain. I usually make one dessert a week. I find that diet desserts don't tempt me like full sugar desserts.
