I was just thinking that the snack monster wa****ting me hard today and I couldn't really come up with a good reason why....until I looked at yesterday's eats again....way more carbs than I usually get. Toast with Breakfast. Croissant with lunch. Whole Wheat Bread with Dinner. It's that dang Carb Monster trying to make an inroad into my life again. I may end up doing about 20 shakes tomorrow (slight exaggeration) but I will regain control.

SALTED CARAMEL BAANA BREAD
BREAD:
2 cups all purpose flour
3 teaspoons baking powder
1/2 teaspoon kosher (coarse) salt
1/2 cup unsalted butter, softened
1 cup packed light brown sugar
2 eggs
3 teaspoons vanilla
3 ripe bananas, mashed
1. Heat oven to 375 & spray 9 by 5 pan with cooking spray
2.In medium bowl, mix flour, baking powder and 1/2 tespoon salt; set aside. In large bowl,, beat 1/2 cup butter and 1 cup brown sugar with electric mixer on medium speed until light and fluffy. Add eggs, one at a time, beting just until combined. Beat in vanilla and bananas until well blended. Gradually add flour mixture, beating on low speed just until incorporated. Pour batter into pan.
3. Bake 45 to 55 minutes or til toothpick inserted in center comes out clean. Cool 20 minutes. Run knife around edges to loosen loaf, remove from pan to cooling rack.
GLAZE:
2 Tablespoons unsalted butter
1/4 cup packed light brown sugar
2 teaspoons whipping cream -I used fat free half and half and it worked
1/3 cup powdered sugar
1/4 teaspoon kosher (coarse) salt
In small saucepan, beat 2 tablespoons butter and 1/4 cup brown sugar to boiling over medium heat, stirring constantly with whisk. Boil and stir 1 minute. Stir in whipping cream. Remove from heat; stir in powdered sugar and q/r teaspoon salt. Immediately drizzle over loaf (glazw witl hardern quickly).
Makes 12 servings
I burned the first batch of glaze. I learned to get everything measured before i started the second batch, it comes together fast!
Thanks, I makeover recipes like this all the time because I am a diabetic. I would swap the butter for 1/4 c canola oil and 1/4 c fat free milk or nsa apple sauce. I would use 1/4 c dark brown sugar (stronger flavor) and 1/2 cup Splenda. I might try to use 1 c. white whole wheat pastry flour, but sometimes it makes muffins taste bitter or turn a yellow color. The glaze is tricky because that is where you get the great flavor. I might keep it the same or try using Splenda for the powdered sugar. It only adds a little over 1 tsp.of sugar (5 gms of carbs) per slice, It might be worth it. Thanks for sharing. I never thought of adding a caramel glaze to banana bread or muffins. It's Family Day here so we have the day off work, which was nice, a good break, chance to get caught up on studies and housework. hard to believe that at in my 40's I'm still studying....sigh, should have stayed in school when I was young , oh well.
Breakfast: 4 oz of chicken fajitas (chicken, cheese, onions, peppers)
Snack: Venti cappuccino 1% milk
Lunch: lentil/sausage stew 3/4 cup. sounds better than it tasted, but it was a new recipe
Snack: 1/4 cup nuts (thanks Tess, nuts were a better choice than the sweets)
Supper: 3 oz roast chicken, 2 tbsp cranberry sauce, 1 cooked carrot
snack: 1 cup 1% milk with coco and 1 scoop vanilla protien powder and 1 splenda
I think I did pretty good today overall, but I should do a calorie count (I'm never very good with that). I had wicked serious cravings for sugar but had water with Mio (it's like Crystal Light) mixed in. I'm really digging my hotcoco right now as I type, it's delish
Listened to a really good talk on how just one drop of negative thinking can affect all your thoughts. I've struggled with a lot of negative thinking about failure with my surgery, I think a lot of self-sabotage is going on, so I need to take some time to work on my head as well as my menu! this forum helps, cheers!
Oh if only they had a surgery for our heads at the same time they operate on our stomachs. I totally agree on the negative thinking and self-doubt line of thinking as well. Looking back over the past few years I can honestly say that I've cut some people out of my life....they weren't my cheerleaders. There are some people that just aren't happy unless they've brought others down to their depths. In the words of the youtube lady "Ain't nobody got time for that!!"
