I tried to post last night but my laptop just wouldn't cooperate. Oh well. I had a wonderful weekend away with my sons and their girlfriends. We ended up getting over 4 inches of snow Saturday while we were in the mountains. I also think we may have found our little piece of heaven up there-- 8 acres with a small creek that runs along side it in a hollow with a magnificent west facing view of the Blue Ridge Mountains in Virginia.
Other than having to much salt on Sunday and not nearly enough water intake it was a good weekend food wise. Whenever we are all together there is always a huge pot of soup simmering. This weekend was no different. Sunday's eats looked like this:
Breakfast: Fruit Salad, Toast & Sausage link
Lunch: Country Ham on a croissant
snack: Starbucks Cappuccino w/ splenda and soy milk
Dinner: 1/2 ham & cheese sandwich on whole wheat
Blessed are the flexible for they shall not be bent out of shape.

That place does sound beautiful. I always thought that I would retire with a little cabin of my own, but as I get older I think more like I need to be close to the doctor's office, groceries, family. I guess my priorities have changed, but I still like to visit the mountains. Your food looks good for the weekend. Keep it up.
