Good Sunday Morning Botts:

 

We have survived the first 48 hours after wisdom teeth removal. Yay!  My son has been awesome!  I am going to kick back today and try to relax.  TOM and it is kicking my butt.  My eats for today are:

 

Breakfast:  S.F. French Vanilla Coffee with Miralax

Snack:  Chocolate Brownie Quest Bar

Lunch:  Potato Soup

Snack:  Deep Chocolate Vitatop

Dinner:  Chocolate Brownie Quest Bar

Snack:  Deep Chocolate Vitatop

 

Exercise:  Taking a break today

Hi Tess Morning BOTTS!

Well, this is the first time I’ve been back on line since Wednesday, came down with a virus not the flu.  Started out as a couch and quickly went from 9 to zero within hours.  The doctor claims I should back to normal sort of in a few days but the cough will hang around for a week or two.  And if co-worker are still coughing and sick I could get it again.  I haven’t really eaten in days down two pounds.   

Eats for the day will be liquids…coffee, orange juice, warm lemon & honey drink and protein soups. 

Work out today will be watching TV and the TV watching me (napping)!

I will check in tomorrow.

Good Morning all! Todays eats for me aren't too exciting.

 I am up 2 pounds now which is crazy, I didn't gain over the holidays but I do now! I can't figure my body out some times! Frustrated.....

Tess since you are loving those vitatops here is a recipe for some home made ones. They are delicious to say the least!

IMO much better than the vitatops. Very simple to make too.

 

1 3/4 cup Oats
3 Egg whites
3/4 cup Unsweetened cocoa
1/2 cup Unsweetened applesauce
1 tsp Vanilla extract
1/2 cup Plain greek yogurt (or regular plain low fat yogurt)
1/2 tsp Cream of tartar (or 2 tsp. vinegar)
1 1/2 tsp Baking powder
1 1/2 tsp Baking soda
1/4 tsp Salt
1 cup Ho****er
1/2 cup Baking stevia OR 1 cup sweetener of choice that measures like sugar 1
1/2 cup Semi-sweet chocolate chips
Tip Foil cupcake liners, remove the inner paper lining (because paper liners tend to stick to muffins!)

1 I used NuNaturals More Fiber Stevia Baking Blend. If using packets of stevia, I recommend using about 8-12, or adjust according to taste.

Nutrition Breakdown

 

12 Servings (bigger muffins)
95 Calories Per Serving
3 g Fat
23 g Carbohydrate
4 g Fiber
4 g Sugar
5 g Protein
3 WWP+*

*Weigh****chers Points per serving

Preheat oven to 350 degrees. Line 2 (12-cup) muffin pans with foil cupcake liners, or spray muffin tin with non-stick cooking spray. Set aside.

In a blender, (or food processor), mix all of the ingredients together, except for the chocolate chips. Blend until oats are ground and mixture is smooth.

Place mixture in a bowl and gently stir in 1/2 of the chocolate chips (set the rest aside). Scoop mixture into prepared muffin pans.

Place muffins tins in the oven for 10 minutes. After 10 minutes, remove muffins from the oven (but don’t shut oven off), and distribute the other half of the chocolate chips on top of each muffin.

Place the muffins back into the oven and bake for an additional 2-5 minutes, or until a toothpick comes out clean.

*Note, you could skip this step by putting all of the chips in the batter, and baking the muffins for 12-15 min straight, but this method gives the muffins the traditional ‘VitaTop Muffin’ look with the chocolate chips on top!

Cool muffins before removing from pan. ENJOY!!!

Thanks so much for the recipe.  Wanda up above got me started on the vitatops and I do love them.  I will give this recipe a try too.  Thanks again.  Also, sorry about the gain this week.  Some times when I change how I am eating my body reacts with a gain until it figures out what I am doing and releases the weight.  I know it is very frustrating but please hang in there.

Let me know how you like them, I love them and the ingredients are "clean" I even used organic chocolate chips.
