Good Morning.

Tess, that pasta sounds amazing!! Tomato, basil and olive oil are my absolute favorite! YUMMMMY!

Day one of the low carb adventure went better than expected. I didnt have as hard of a time with cravings as I was expecting. I did want something quick between work and the gym so I made a quick shake with low carb protein and almond milk. That was great. Bootcamp was hard, but I think its only because I was out a week and a half.

Eats for today:

Coffee w/ cream
Scrambled egg w/ cheese and 2 slices bacon
Leftover 1/2 chicken breast to make into a caesar salad
Iced Latte protein shake
Cheese stick and deli turkey breast, on hand if I need it
Grilled flank steak and sauteed zucchini with onions and parm.

If I need a dessert, I'll make a protein smoothie

Hi all!  Small gain over the weekend due to family birthday parties & a sleepover with 4 of my nieces and nephews that made it too easy to have cake & pizza but was able to watch myself yesterday and push during my cardio so I am back down today.  Hopefully I can push to lose some this week.

B - protein bar
S - 8 baby carrots w/peanut butter (forgot my banana at home)
L - taco salad
S - protein bar
D - undecided, will either be italian chicken with zuchini over egg noodles or a burrito bowl from Chipotle

will be doing my weights during lunch!

I survived the iron infusion. One down - 3 more to go ...
They pumped me with benadryl, pepcid and steroids before they gave me the iron. I did OK... but got small headache and cramps... normal.  Today both continue and I fell I am still processing the steroids. Nice. Most likely due to the steroids - I am not really hungry.
Yesterday I wanted to make ricotta fluff... but did not have any SF pudding so I end up baking ricotta - protein cookies , with lots of egg whites and egg white powder (instead of whey).  I am at the point that I can make anything into protein cookies.  And that took only 30 min from start to finish. The clean up was this morning... lol..

Eats today:

coffee+ coconut milk
hard boiled egg + 3 cookies, few peanuts..
pork roast + veggies
protein shake
protein cookies
salmon burger + veggies

exercise: maybe: walking or yoga...

Hala,

Have you tried these MIM's? Meal in Mug...I think its called. Mostly flaxseed. Can you do flaxseed? Ive seen this recipe and Im going to try to make one tonight and see how it turns out. You can make them sweet or savory depending on what you throw in.

I'll let you know how they turn out.

Ingredients

1/4 Cup flaxseed meal

1/2 Teaspoon baking powder

1/2 packet granular sugar substitute

1 Teaspoon ground cinnamon

1 large egg, beaten

1 Teaspoon butter (or canola oil)

Directions

Mix the flax meal, baking powder, sugar substitute and cinnamon in a coffee mug or single-serving soufflé dish.

Add the egg and butter (or oil). Mix with dry ingredients.

Microwave 1 minute or more, until firm

Turn out and serve with butter or cream cheese. Or toast before applying spread.

Love that.  You can add 1/2 scoop protein powder. I do.
Start slowly. Flax meal has a lot of power - fiber power... Can give me gas and unless you are flowing (BM) really good - constipation.
I do that with 1 Tbs flax meal, 1/2 scoop proteins powder.
And I skip butter,
add pinch of salt.

Make sure you use container that is at least 2 x as big as original amount. If not more. Place a paper towel under for easy cleaning if that thing overflows. Mine did so many times. lol
I make that in a big bowl and then invert that. Let it cool and dry on the outside. Slice it and eat that.
Sometimes I use almond butter and SF jello to top my slices or make like a sandwich.

Thanks! I'll have to try it with protein powder.  This is going to take a little experimentation, but at least its fast and easy. Dont have to wait for it to cook a long time or make a big batch so you can try out a couple different styles.

I tried this recipe for the first time last night. The recipe I posted...I wasnt so crazy about. Thought it was kinda bland and definitely needed more Splenda.

I tried a savory one. I used garlic powder, parsley flakes, salt, pepper and parmesan cheese.  That one I liked better. Tried it with cream cheese on top. That helped alot! Im thinking it would be really good toasted for a little crunch.

I made mine in a ramekin, maybe 2 cup size. I used oil because I assumed that the butter would need to at least be soft and mine wasnt.

Now, my mind is going in all kinds of directions. Just need to play with it a little.

cool...
Some days I mixed mine with some sliced almonds for extra crunch. They would either stay on teh top... or they would sunk in...(depends on when did I put them in) creating a layer of more crunchy stuff.
