For my stuffing I use cooked quinoa instead of bread. As I'm adding the ingredients(sausage,sauteed onions and celery, chopped fresh parsley and a grated apple) to the BIG mixing bowl with the bread in it, I add some to my bowl of cooked quinoa and bake that beside the turkey. It comes out really good!
