Colorful Baked Fish
Makes 4, 4 oz. servings
Prep time: 10 minutes
Cook time: 20 minutes

1 lb. haddock fillets, cut into serving pieces
Ground black pepper to taste
2 cups sliced fresh mushrooms
1 cup diced tomatoes
1/4 cup sliced green onions
1 Tbsp. fresh lemon juice
1/4 tsp. dried basil

Preheat oven to 400 degrees. Lightly coat a glass or ceramic baking dish with oil or cooking spray. Arrange fillets in single layer in baking dish, season with black pepper. Spray a non-stick skillet with cooking spray. Heat skillet over medium-high heat and add mushrooms; sauté just until browned, about 3 minutes. Layer mushrooms, tomatoes and green onions evenly over fish. Sprinkle with lemon juice and basil. Bake, uncovered, for 15-20 minutes or until fish flakes easily with a fork.

Nutrition information per serving: 110 calories, 1 g fat, 0 g saturated fat, 70 mg cholesterol, 85 mg sodium, 4 g carbohydrate, 1 g fiber, 22 g protein.

Here you are, Happy. This is a cod recipe, but use it for the times, and exchange out the ingredients for the colorful fishes.

Chili Lime Cod Print Recipe
  Makes 2 Servings
  1. In a small bowl prepare rub:
      1 teaspoon vegetable oil 1/2 teaspoon chili powder 1/2 teaspoon garlic powder 1/4 teaspoon salt Pinch cayenne pepper (about 1/16 teaspoon)
  2. Using 1 cod fillet (8-12 oz, about 1/2-inch thick, cut in half) or 2 cod tenderloins (6 oz each, about 1-inch thick), spoon rub on top of cod, spreading evenly. If needed, tuck any thin parts of fillet underneath for even cooking.
  3. Put prepared cod in Ziploc® Zip 'n Steam™ Medium or Large bag, placing thicker portions toward outer edge of bag. Seal bag and place in microwave.
  4. Cook on full power for 3 1/2 - 4 minutes or until cod is cooked through and flakes easily. Use 3 1/2 minutes for 1/2-inch thick pieces and 4 minutes for 1-inch thick pieces. If needed, continue microwaving at 30-second intervals until cod is done.
  5. Allow bag to stand 1 minute before handling. Carefully open bag. Use spatula to remove cod from bag.
  6. Spoon 2 Tablespoons freshly squeezed lime juice over cod. Garnish with 1 Tablespoon chopped fresh parsley and serve with 2 Tablespoons melted butter, if desired.

Well, I really want to be in there on or before Valentine's day. I think that's the ultimate goal. We seem SO close now, especially with the kitchen/hall floor down. It seems like its all little things now! I'm getting very excited.
