Kellie is right, the fiber offsets the carbs, as fiber is insoluable carbs that you cannot absorb. A good way to figure the true carbs in a food is take the carb load and minus the fiber load. That is how many you are absorbing. And remember, an average person should consume some carbs anyways for healthy brain function.

I try to keep yogurt in my 'fridge.  My hardest times are in the mid-afternoon and in the evenings.  I buy the "light" yogurts with or without fruit; protein count of at least 5 or 6.  Since they are a smooth consistency, I don't have any trouble with eating too fast or not chewing thoroughly.
