Afraid of Gaining Weight Back
I would say to always be accountable. Don't skip your weekly weigh-in because you're afraid of the number you'll see. A one or two pound gain is much easier to deal with than a sudden 10 pounds after you've avoided the scale for a couple of months.
Remember that you control the hand that brings the food to your mouth, and you control the kind of food, too! You are in control, and the weight will not come back without your assistance. I used to have a nightmare that I would wake up and be fat again. But now I have realized that by keeping myself accountable, I will never have to cope with the extra 152 pounds. I might have to cope with a pound here or a pound there, through overindulgence which as a human being I might do from time to time!
But I also know that eating less and exercising more will take it off, and that eating the right kinds of foods will make me feel good while I am doing it.

Waterwench is absolutely right. Just always try to remember where you are and where you've been. Keeping accountable, for example, by posting on the daily Cardio and Café, will help assure your mind and heart that you are making that continual effort and committment you made on 8/6. You've had an amazing accomplishment and I'm very proud of how far you've come. You should be too. Let that pride be motivation to keep moving, keep sipping tha****er, keep making good choices.... you can do it, you already have!

Anyway, in answer to your question - as has been said already - continue to weigh, even when you think you won't see what you like. That way you can nip any gain in the bud before 1 pound gain becomes 10 pounds gain and so on.
Keep exercising and make it a life habit
Keep enjoying being thinner and allow your mind time to catch up - try to avoid thinking like a 'fat' person - dont' reward yourself with food, etc etc etc - keep your portions small
Basically keep following the rules - they've worked for you up to now - they will keep working all the time you keep following them.
