Water question
Honestly, I count any non-caffeinated liquid as part of my water intake. If I do take caffeine (and I do) I drink that amount of extra water to keep my intake balanced.

I don't often mix water with protein unless it is for chicken soup. Milk has carbs and I can tolerate it so most of the time I use milk. Otherwise all my water is either plain or flavored.
