Genie, I was reading your response to my earlier post and wanted to pass this recipie on to you. I made it Friday night and it was really good (and just the right amount of heat).
Sweet and Spicy Chicken
6 boneless skinless breasts
1 can frozen pineapple concentrate (defrosted)
Honey 1/4 - 1/2 cup (depends on taste)
3 jalapinos diced
Heat oven to 400 degrees. Mix pineapple juice, honey, and jalapinos in a large bowl.
Spray a glass caserole dish that is big enougth for the chicken. Coat the chicken in the sauce
then place in the dish. Pour the extra sauce over the chicken. Cook for 25-30 minutes.
The chicken was tender and tasted very good. Enjoy!!!
