Cauliflower Pizza

 You all have got to try this!!  Made it tonight for the DH and he loved it!!

Ingredients
1 cup cauliflower, cooked, riced
1 egg
1 cup mozzarella cheese
1/2 tsp fennel
1 tsp oregano
2 tsp parsley
1/2 lb sausage
1/2 lb mushrooms
1 c mozzarella
1/2 c pizza sauce
Directions
  1. Preheat oven to 450 degrees Farenheit.
     
  2. Spray a cookie sheet with non-stick spray.
     
  3. In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan. Sprinkle evenly with fennel, oregano and parsley.
     
  4. Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).
     
  5. Remove the pan from the oven. To the crust, add sauce, then toppings and cheese.
     
  6. Place under a broiler (grill for the Europeans) at high heat just until cheese is melted **.

I made my own pizza sauce with tomato paste and crushed tomatoes and added the spices.  This is an absolutely awesome recipe!!

It looks good and pretty easy.  I have a question about how you "rice" the cauliflower.

 i have a mini-food processor, but like i said in another post, you can chop it up as small as practical, microwave for about 7 min on high in the microwave (your oven may vary) then either take a fork or a pastry tool and make it as fine as possible, then add the egg and mozzarella...mix well,,,press into the cookie sheet/pizza pan...it was great...

Have never seen a recipe like this--looks really good.   I don't have a "ricer," so I'm assuming it's OK to just ma**** up well w/ a pot. masher--ya think?

I have a Cuisinart mini-food chopper...it grates/chops the cauliflower perfectly...it was really strange...i never expected it to be so good...lol...i ate way more than i should have, but it was awesome...

OK - bear in mind I'm an "if I can't nuke it, I can't cook it" cook  That's not the problem (I'm a whizz at figuring out how to nuke non-nuke recipes LOL)

The crust?????   Pizza sauce - details please   I'm not good at amounts of ingredi\ents - but this sounds wonderful  I sure want to give it a try!!!!!

 what you can do is chop it up as small as possible and microwave it (no water!) for about 7 minutes for a whole head until it is tender and mashable...then work it with a fork or a pastry cutter until it is the right consistency...then mix the cheese and egg with it...

my version of pizza sauce:

1 can diced tomatoes
1 small can tomato paste
1/2 tsp garlic (from the jar you can get at the store)
1 tsp italian seasoning
1 tsp oregano
1 tsp parsley
1 tsp freeze dried chives
salt and pepper to taste (mostly pepper...we don't eat much salt :))

mix together in a small saucepan until heated, about 8-10 minutes on medium heat.

 just as an FYI...my DH absolutely supports my 'carb free' lifestyle...and he absolutely LOVED this pizza...and he is so much a meat and potatoes guy...but he was raving about it to our neighbor after dinner,..it really was wonderful...

Janelle - I hate to be a pest, but does the calorie/nutrition info include a crust?  I am assuming you buy or make a crust, so this might just be the information for the ingredients listed.  Thanks so much for the sauce recipe - I can figure the nutrition info for it myself.  You are a dear!
