Comparitively most of the prices I've found so far have been akin to Omaha Steaks... I'll throw a few at you and hopefully they'll help your hunt. it seems, alot of places want you to buy in bulk, and that's where the excessive pricing comes from. Costs less to buy more, kinda deal.

Low fat (and I like the taste - Our Ruby Tuesdays has bison burgers and I just have to be sure to ask them to cook it rare as it can be dry very easily because of the low fat. At home I like to mix a pound of ground buffalo (can sometimes get it at Publix), a pound of pork sausage, 2 eggs, a can of muchroom stems and pieces, and a can of french cut green beans to make a meat loaf. (Yes, true to form, I nuke it LOL - 17-20 minutes depending on the microwave) 1/8th of that (.125 on my plate) is 339 cal, 29g fat, 125 g chol, 1009 mg sodium, 3 g carb, 1 g sugar, 1 g fiber, and 17 g protein. Sometimes I add a little beef boullion - but usually not - use Jimmy Dean Hot sausage for zing.
That actually sounds really really good. Do you use anything for sauce/gravy? Ketchup?

No - but one thing I forgot is that I sometimes add onion flakes to it. I also sometimes use ground turkey or even beef but both of those are higher in calories so buffalo is my meat of chioice. And someone told me elk is even leaner and more tasty than buffalo - can't speak first-hand to that as I've never had any to try. I like venison and pork too and it's about the same as buffalo.
