Mock Rice Pudding

Found this recipe on another site, it was posted by MaryEllen.  Although I'm always a little skeptical at trying new things, it was really GOOD!  A little sweet...maybe next time I'll try without the raisins.

Try making this recipe for you and your guests, don't tell them the ingredients until after they've tasted and complimented you on it!

1 Small package of sugar free vanilla instant pudding
16 oz light cottage cheese
2 snack size boxes of raisins
cinnamon (to taste)
dash of nutmeg


Make pudding according to the directions on the box, adding spices before you whisk pudding.  Once the pudding begins to get thick, stir in cottage cheese and raisins.  Place in frig and let set for about 1 hour to blend.

This is so good and it is better the day after it is made.  The raisins get real plump.  I hope that if you like rice pudding you will give this a try.  I could not believe how much it tastes like the real deal, but sooooo much better for us!

It's sort of a cross between rice pudding and cheesecake filling.<-------THIS WAS THE PART THAT CAUGHT MY EYE!

I just made it and all I have to say is ...WOW!!!  I am not a fan of cottage cheese, so I was hesitant, but it tastes so much like rice pudding I couldn't believe it. 

I figured out the cals, etc. on Sparkpeople...only like 192 cals, 20 g protein (sorry, don't remember carbs, but it wasn't bad at all....or sugars) -- that was for 1 of 4 servings...tough to eat that much, so it's actually less.
