Got this recipe for flourless peanut butter cookies from the Missouri board. Will probably try and make them later today.

1CUP PEANUT BUTTER
1 EGG
1 CUP SUGAR OR 3/4 CUP OF SPLENDA AND 1/4 CUP OF BROWN SUGAR SPLENDA
1 teaspoon of vanilla

you need the little bit of  brown sugar to keep them from crumbling....put them on cookie sheets in spoonfulls , i only smash the top very very lightly as they spread out when cooking anyway...watch them closely as they will get overly brown quite quickly..

I made these last night!!  Didn't have to put the brown sugar Splenda in there.  Cook at 350 for 11 minutes.  Makes 12 cookies.  No need to grease cookie sheet.

After they cooled, I put them into a ziploc and froze them. Very tasty!

After making these cookies I went to Fitday to check the nutrition on the cookies and they came out to over 120 calories per cookie. Just thought I'd let you know.

Yummmmmm!  Thanks for sharing.  I'm going to make them - perfect for me.... easy, few ingredients and virtually impossible to mess up.  I'm no Martha Stewart!  These sound great.
