Today has been cold and rainy......very dreary day. DH doesn't like these kind of days at all. I'm ok with it for a day or two. I made Taco Soup for a friend who is recovering from a fall where she cracked a vertebrae. I first thought May wasn't a soup month but with it being so cool, it was perfect. I took them Taco Soup, cheese for topping and a bag of tortilla chips. I also baked a small Skillet Apple Pie. This is the easiest pie and is delicious. I didn't save any for home. I took this pie to a pot luck and she thought it was the best pie she ever had.
I'm having problems with belching after eating. DH says I eat too fast. I don't think I am but maybe so. Three times in the last week my dinner has come up and I felt so much better, but I know that's not good for my health.
