Wow, Is it really the end of January? It was beautiful here and made it into the 50s. Still lots of snow sitting around but Teke and I got out and drove around the neighborhood. First drive in 2 weeks.

The taco pie is a recipe I got from Face book. I don't ever follow them exactly but you basically make a "crust" from ground turkey mixed with taco seasoning, then top with refried beans, corn, salsa and cheese. I ran out of room before I got the salsa on so I will just top each serving with it. Hope it is good, I made 2 so I could freeze one for later.
