I love the baby bel's! I don't buy them often because they are expensive and I eat them to fast. Our local grocer was out of them yesterday and I had a craving for them.

Someone suggested I call the way I eat the "Inca diet " . They have a point .. an entire continent ( South America ) and several empires were built on a largely vegetarian complex carb based diet of 1) may varieties of heirloom potatoes 2) amazing races of local hand pollinated corns 3) beans
There was very little "protein " as we think of it or meat - only guinea pig ( cuy) melanotic Chinese chickens (very skinny) and on the coasts ,fish. The culture did not have any milk products not knowing cows goats or sheep.
Yesterday I made "beef "stew with about 10 homegrown yukon gold potatoes .. garlic beef stock a bag of mini carrots a huge container of mushrooms and about 1/4 lb beef eye round ( very lean) which I cut up as pot roast . It ended up very carb- based and juicy so today I am using the sauce to cook toasted mote corn ( south america big corn) which I will add to the dish and freeze as tv dinners . Protein wise according to many this is vey low but I feel extremely healthy on this diet.
Last nite I had a glass of Non alcoholic wine with dinner ... and about two small bowls of my stew . This morning- two giant containers of milky chai tea - and ill eat some more stew and met corn when its ready with tomato/basil salad from the garden .
For dinner I plan to eat scallops in fat free butter /garlic scampi sauce with homegrown broccoli. I always snack on air popped popcorn w fat free cheese sauce and eat out 4 servings of fruit green grapes and homegrown raspberries today . I'm trying o cut down on the bread :) so far so good
