Menus and Miles for Roz -Tuesday, April 7th
I'll get this started. I know Roz has been dealing with her hubby's hospital stay and I hope things are getting better for them.
I'm in a munchy mood. I made sure I ate some good protein earlier (chicken) but I want MORE! I probably have carbed up too much and am paying the price now. I even think I was in Ketosis last weekend as I had a nasty taste in my mouth - haha - that's gone now so...
B - coffee
B2 - rest of the sausage/gravy/egg/biscuit mix
L - 2 pieces of lombardy chicken. It's really a LARGE chicken breast I cut in 4 pieces, so it was 1/2 a chicken breast.
S - I made these low-carb peanut butter, cream cheese, butter, protein bars. I'm not a huge cream cheese fan. If you are you'll love them, but I'm eating them anyway.... It says 3 net carbs per piece - but not sure I'm buying that
D - no idea...
Vits: yes
Water: doing good today

Jody, you do such a good job of diversifying your menus...me not so much Although I do havea new protein drink today...bought the Syntrax sample pack and Im trying to pick a new favorite.

But - I find those who tend to stick to the same groups of food do better in the long run. I think then you know what you're getting and it takes a lot of the guess work out of it. I tried logging on Myfitnesspal last year... it lasted about a week. Mainly because it's a real PITA because I DO tend to cook, with a lot of ingredients and it was just too cumbersome to enter the recipes in. I did log my food for probably 2.5 years when eating was much simpler :)
I tend to make a LOT of food and eat on it for a long time (like a normal recipe). I've started experimenting with my cooking concentrating low-carb - trying new recipes, etc. Now - while that may be good, it could be bad - lol. I do like variety. I also don't weigh or measure my portions. I DO pay attention to my pouch though and what it tells me. I also can tell if I'm having a "bottomless" day (like today) I know to stop. Ha - yesterday my restriction was awesome - today, notsomuch!

I'm trying to break the carb cycle myself but then had oatmeal for breakfast. At least I put protein powder in it. Rainy here and so I have been working instead of playing. Been hungry so may add another snack, hoping the hot chocolate will hold me til supper. Edited, yeah, I added a snack.

I've been using almond/coconut milk for my hot chocolate and shakes. It is really low carb, like 1 and low cal, like 35 and makes things so creamy. I feel indulgent.

I really want to try some of that Batch cooking like Jody mentioned above and freeze meals for future use. I especially thought the mini meatloafs from EGG Faces site looked like they would freeze well and be a good option when the boys were having say Pizza.
Most of the time now I just grab some chicken or steak out of their meal. Or if its lunch on the weekend, I do a little bit of ham or Ill do some chicken or egg salad and a few oz does it for me.
I just bought some of those mini-meatloaf pans the other day - and wanted to use them for the egg/sausage breakfast bites.
I also think they would be great using for a casserole where the ingredients are mixed - the portions would be pre-determined! I am single and usually just cook for myself - so an entire recipe is a LOT! I can eat on it for a week (typically don't freeze - but should).
