Menus and Miles for Roz - Happy April 1st!!

Thanks for starting M&M Jody!!!!!    Today was my first day back to work and my desk is covered!!   We had such an exciting weekend and even though I watched all of the teams at the competition I couldn't wait to watch them again on FB and read all of the comments.  I am soooooo very Proud of my DD!  She has turned a sport she loves into a very successful Program.

You put the pork rinds in your meatloaf?  I really want to try them on chicken and see what DH thinks.  I'll make some with the chicken coating I usually use just in case he doesn't like it.  I put oatmeal in my meatloaf instead of bread or other fillers.

Breakfast:  1 Matrix Mint Cookie Protein Drink  35g

Lunch:        Tuna Salad with 6 Saltines

Snack:        Ham and Cheese Roll-up

Snack:        Nature Valley Almond Crunch Bar (only buy Gluten Free)

Dinner:        Roasted Chicken and Vegetables

Hi Roz - welcome back!!

I chop them in the food processor to a fine powder almost.  Yes, it called for a 1/2 cup of the pork rinds for the meat loaf.  I may put more in next time as it was a little "loose".  Even my picky sister liked the pork chops/chicken coated in it.  Use egg for your initial dredge, then the pork rinds and I'll guarantee you know one can even tell!!  Just be careful when browning as they can easily burn.  You can go on Pinterest and there's recipes for low carb pork chops and that will be one of them.  Or you can go to my Meals board and get it from there. 

The videos of the teams was AMAZING!  I was absolutely taken with all of it.  Your DD has done a fabulous job!! I can only imagine just how much work and dedication by everyone goes into the performances/practices.

another pretty day here but cool.  Spent the morning in the barn with the vet doing routine stuff, now to get some work done.

Pretty day and cool here in VA too.  Supposed to be 70 tomorrow - may need to get the bike out for the first spring ride of the year!

I need to start supplementing more protein drinks... I mixed my protein coffee yesterday and it curdled - what's strange is I didn't do it any differently than before!  Oh well... it'll work better next time.

Cloudy and a whopping 40 degrees here in northeastern Ohio! Spring is actually coming!

Still struggling with this darn head cold, really how much could one nose run?!

B protein coffee, half scoop (love that hubby of mine!) 14.5g

2nd B strawberry protein with water and a 1T heavy cream, 1/4 cup strawberries frozen and a 1/2 small frozen banana  25g

L 2 oz slice roasted turkey, slice of light swiss rolled up with a smear of jalapeno cream cheese wrapped in a romaine leaf
