Menus and Miles for Roz - Happy April 1st!!

Hi everyone!  I'll get this started.  Not sure where Roz is at but she's posting on FB, so all is good!

Ended up making a low-carb meatloaf recipe last night - turned out good, a little loose (fell apart) but flavor was good.  One of my recent discoveries is using pork rinds mashed up in lieu of breading/filler.  This recipe called for them and I use them to use as a breading for pork chops, chicken, etc.  It is real good - now eating them alone, ugh....  You also can put a little powdered ranch dressing in with the rinds for dredging and it gives it an even different flavor - but, it can be a little carby that way, but you don't need a lot to get a good flavor.  I also made a low-carb cheesy biscuit using almond flour.  My first attempt ever using it - it was 'ok'.  More of a cornbread texture.

D - not sure but I have a few chicken recipes I'd like to try out.  Also want to make a tomato/burrata salad.

Exercise - 30 minutes elliptical; 10 minutes rebounder; 90 squats and 1 min 40 seconds plank! didn't get to the challenge yesterday :(

Looks good!  I've seen several recipes for bacon wrapped scallops but just haven't made them.  Need to put scallops on my shopping list.

Hi Jody, I purchased the scallops already wrapped in bacon from the grocery store.  All I have do is put them in the oven for 15-20 minutes!  Yummy and easy! :)

Ugh. Got on the scale to find I am the same weight I was a month ago. Darn it! What a struggle to take off the last 10 pounds.

B-Premier Protein shake with 1 Tbl SF/FF instant vanilla Jello pudding mix and frozen coffee cubes

S-1 C. Plain non fat Greek yogurt with 1 Tbl, Torani SF syrup and 1 cup strawberries

Beautiful day in Kansas City.  Supposed to be 80 degrees.

I see Premier protein shakes on menus here.  I tried the chocolate but didn't care for it.  Are you having vanilla or chocolate.  I would like to find a RTD I like to bring to work.

We went to Logan's last night.  I had a sirloin steak, salad and sweet potato (toppings on the side).  The potato would have fed a family of 4.  No one needs potatoes that large.  I ate a little and took the rest home with my leftover steak.

Today's eats:

B:  Click shake

B 2: Weight Control oatmeal

L: Salad w/sirloin steak, 3 strawberries, vinegarette dressing

S:  Protein powder mixed in ice water - Someone here posted that's how she drinks her protein and I really like it that way.

D:  Roast chicken; sweet potato

I haven't found a RTD drink that I like, plus the quality of protein in them isn't the best (especially for those earlier out).  When I worked in an office after surgery, I'd just mix up mine in a shaker cup and take with me, or take the powder in the cup, add water later then drink. 

Amazing how much food you get when going out!  I went out for dinner a few nights ago to a BBQ place and the person I was with knows my story and how much I eat (even 6.5 years out) but his brother didn't.  I ate a lot, for me, then said I was full.  Got the comment "you're a cheap date" - LOL... but, there was enough food to last 3 more meals, easily - AND we shared!

I like my Nectar's fruity protein in ice water - the fuzzy navel and pink grapefruit.  Chocolate or coffee flavors I like in Unsweetened almond milk.

I can't do the RTD stuff.  Never found one that didn't taste "off". 

I put a tube of crystal light and a 1/2 scoop of protein powder (Caribbean cooler or lemon tea) in a snack bag and bring my big blender bottle.  If I am gone all day, I mix one before I leave and carry one in the bag.  Works for me.
