Low Carb Bacon Cheeseburger soup per Roz' request!
Roz had requested my Cheeseburger soup recipe. I thought I'd post it here for everyone to see. If you use Pinterest like I do, you can follow the link below and PIN it. I use Pinterest for my own personal recipe folder. I keep a lot of my favorites there so I have them wherever I go.
This is titled Bacon Cheeseburger soup. Now - who doesn't like bacon in almost EVERYTHING? Well.. First time I made it I didn't have any bacon so I left it out and like it, second time I included it and didn't really care for the taste - it seemed (to me) like the bacon overpowered it. The third time I halved the bacon, which helped a lot, but I personally like it better without the bacon.
This is one of those "soups" that is even better the next and subsequent days. I also included mushrooms in mine (I put them in almost everything!). You can modify as you like - really I don't think there is anything you could do to ruin this soup! Oh, it's not the consistency of fluid soup, but thicker. I've (in the past) wanted mine just a little thicker and put a little cornstarch in it - worked like a charm!

- 3/4 lb lean ground beef
- 6 ounces cooked center-cut bacon, chopped up
- 1 (10 1/2 ounce) can Campbell's cheddar cheese soup, undiluted (this can be hard to find - I buy up a bunch when I DO find it, not all stores carry it)
- 1/2 cup half-and-half cream (I use full fat whipping cream - works great and lower carb)
- 1 -1 1/2 cup low sodium beef broth (reg sodium broth - I can't tell the difference)
- 3/4 cup shredded sharp cheddar cheese
- 1/3-1/2 cup sour cream
- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder Use whatever seasonings you like.
- 1/4-1/2 teaspoon Season-All salt
- 1/4 teaspoon garlic powder
Directions:1
- Brown the beef in a large pot then drain any excess grease.
- Stir in the rest of the ingredients then simmer over medium-low heat for 20 minutes. (Stir occasionally while cooking).

I haven't figured out Pinterest. I joined but can't seem to use it. It always surprises me when I get notices about folks following me when I do nothing on there. Maybe I'll see about keeping recipes there.
