That sauce sounds delicious !   I just made thighs and legs marinaded in pressed garlic, S&P and olive oil. Very moist, I baked it.

To the OP.  Definitely try dark meat first.   I still have trouble w chicken breast and pork loin, too lean.

thank you so much...it is so weird when it is one of your favorite foods.

Try cooking the breasts in a sauce of some kind or eat them with a little sauce, like salsa or some non fatty/carby sauce

Not sure how far out you are, but I would put a teeny bit of my veggie in the for with my chicken and it would go down much better.

My experience with chicken is 50/50.  No rhyme or reason! One day it works the, next it kills me.  I tried marinating it and using my meat tenderizer (hammer) last night and it helped.  I was all excited about chicken curry the other night...made it with sugar free coconut milk and no fat yogurt but 2 bites in I was done. My pouch is picky but I still love it!

I do much better if I cook it in the crockpot

I have the same issue with eggs... I like them and they sound good, but I simply take 1 or 2 bites and want to vomit.  I can't force myself to eat them.  Not sure why, so I just don't eat them anymore right now.
