Well where I live in Europe there is only one size - 250 grams!  That makes me laugh so hard because I know it's a justifiable question it's just that I don't have any options except one.  It's full fat too.  Ah, I guess I bake it at about 175 C - which is about 350 F.  The egg helps set the cheese - think old fashioned lasagna.  But I like mine moist so I try to keep it in the oven for 15 -20 minutes then it sets overnight in the fridge (or all day) before I freeze it.  I use silicon muffin liners or pans for all kinds of things as they help me keep my portions under control!  I freeze chili this way, Price's taco bake, lentil dahl etc.

If I want to do a bigger Ricotta bake - like in a rectangular pyrex dish - I might layer in blanched courgette slices, or thin slices of eggplant, or wilted spinach as if I was building a lasagna.  This makes a great pot luck item that is WLS friendly and yummy to most everyone.  If I do that then I use good quality canned chopped tomatoes for the bottom layer and then finish with a tomato passata sauce/tomato sauce on top.  I just sort of use what I have on hand!  But I have found that having this in the freezer means I don't get cranky when my kids ask for pizza night :)

sounds good. thanks for the info. I have mini muffin pans that I"m going to use when I make this cuz I figure that is about a serving size for my sleeve. I'm gonna have the kids and my fiance taste it today. I'm so excited about making it. It sounds so yummy and being able to freeze them so I have premade meals is so exciting for me since I haven't done that at all since I had my surgery. IT will be good to have a go to when I don't feel like cooking or I want something quick. It will be safer for me and will stop a lot of snacking. Thanks for all the info I appreciate it. HUGS

Just listening to you talk about Cheer makes me tired - lol.  Your DD sounds like one busy lady!

Eating is ho-hum.  I'm trying to eat stuff that isn't making me feel yucky.  I also think some gluten issues may be raising their ugly head with me.  But it doesn't seem to be stopping me from eating it!

You have no idea how busy she is!  It's practically a 24 hr. job. Her mind never stops thinking about choreography and music.  Besides her 11 teams she travels around and choreographs for other gyms and high school squads.  Thankfully she has a wonderful DH who is a great dad and doesn't mind cooking and cleaning!!  Unless we have a competition or she has an outside job,  Friday evenings and Saturdays are their only family time.

I need to read more about gluten.

We had our warm weather last week.  Wed. was up to 60.  Last night we got ice. Our DD#1 drove through our yard this morning because she was afraid to go down her long driveway.  The salt trucks were out all night and the roads were pretty good this morning.

My DD#2 loves her Zumba and weight lifting class.  I think she has figured out I got her the T25 videos because I haven't bugged her to give me a Christmas list.

Cabbage....YUM!  I have to check and see if that's on my  allowed to eat list.  What is hot chocolate/decaf protein?

I love cooked cabbage and DH doesn't so I have it for lunch a lot.  It cooks quickly in the microwave.  almost no calories and lots of good fiber.

I've been trying to find some more hot drinks since it has been cold.  I make instant decaf and put a scoop of protein powder and a 25 cal hot chocolate mix in it.  It isn't much different than protein coffee but it isn't bad with the instant instead of brewing coffee.  When I do hot chocolate, I like milk in it and I am trying to cut the carbs.  It just adds a little different flavor.

Do you use a microwave steamer?  I was thinking of asking DH for one but when I checked them out there are so many to choose from.
