Taco bake is kind of a mix of your chili and ricotta bake,   I think the original recipe was one of Niki's on the RNY board and I did make it like that at least once.  Since, I have made my own adaptions.  Basically you cook ground beef, turkey, chicken, whatever with a packet of taco seasoning and whatever veggies you like.  You can hide veggies in it because you really don't taste the different ones much.  I use peppers, onions, celery, squash if I have it.  Put that mix in the bottom of a baking dish, cover with refried beans, cheese and bake until it is bubbly.  I will probably use 1 lb of ground beef, 1 c sausage flavored TVP, a can of black beans with the veggies.  Lots of healthy fiber.  It makes a ton so I only do it when DS is here.  The guys eat it with chips but I just eat it plain.  It freezes well and heats up well so I love to have the leftovers.

good for you, walking 5 miles!!!!

Sounds good.  How do you make your spinach ricotta bake?

I remember someone saying once if you want to tell if it is head hunger or real hunger, offer yourself a plain hard boiled egg.  If you are really hungry, you will eat it, otherwise, head hunger.  That would work for me.  I like eggs just about every way except plain hard boiled.

good for you walking in the cold.  It does make you keep moving to stay warm!!!
