Early morning edition, Happy Veteran's day!
I work with veterans every day and many people will never know the challenges or sacrifices they have made. Feel very grateful this day that my father and two brothers have been safe and sound through their military service.
I woke up ay 6am!! Boo! I am one to sleep in but have a lot to do on my upcoming trip and have appt at vet today for my Gracie. Have gotten a lot done this morning so that is good. Egg bake in the oven as well as two mini protein cheesecakes as I had some leftover cream cheese to use. Hoping to make chicken quesadillas for the first time tonight too! Woot!

I appreciate all that the veterans have done for us. I love my freedom. My father in law served and used to tell us stories about his service (Normandy Beach). We recorded some of them, but the tape got destroyed - I sure wish I had it.
I cooked a pot of white chicken chili last week and ate on it all week long. This weekend I cooked, Sticky Crock Pot Chicken(Thighs instead of legs), low carb meatballs-which I had not cooked in a long time and carbquik cinnamon scones. I am going to try and make some pasta maybe tonight with the carbquik. I usually use spaghetti squash, but saw this recipe and thought I would give it a try. I've never made any type of homemade pasta so it might be a disaster!!
