Menus and Miles Monday Sept. 23rd
I am the hospital right now getting a CT scan and blood work. Fortunately I didn't have anything but my morning protein drink. PCP is checking me for diverticulitis. I've been reading about it and it does seem possible. I don't eat much fiber and I do strain. One cup of liquid down and one to go!
I NEED the banana muffin recipe!.....lol

My MIL had diverticulitis. She had terrible pain when it flaired up.
Hope they get you fixed up.
The banana muffins I did:
3 ripe bananas mashed up.
1 cup splenda
2 large raw eggs
8 tbls butter(unsalted)
1/8 cup of milk
1 tsp ground cinnamon
2 cups Carbquik
1 tsp baking powder
1 tsp baking soda
1 tsp salt
Cream sugar and butter until light and fluffy. Add eggs one at a time beat well after adding.
In another bowl, mash the bananas with a form, mix in milk and cinnamon.
In another bowl, mix carbquik, baking powder, baking soda and salt.
Add banana mixture to creamed mixture until combined. Add dry ingredients, mix just until carbquik disappears.
Pour into greased muffin pans. I cooked on 325 I think for about 20 - 25 minutes - until it is done and toothpick comes out dry.
I got the recipe from Food network and made some changes to it.
It made 18 muffins.

They say I don't have diverticulitis but I sure have all of the symptoms including a bad headache. They are going to send me to a gastro Dr. now. I had a colonoscopy a couple of years ago and I had a scope recently after I had food stuck. I figured they would send me to a urologist since I am sick and in pain after I urinate.
Thanks for the recipe and thank you for the step by step directions!!!! I will have to hide a few bananas or buy some from the ripe banana pile at the grocers. DH goes through bananas like crazy. I'm sure glad they are one of the cheapest fruits out there.

Oh Roz - I am sorry t read that you are in the hospital - that's never fun, even if it's only for tests. I hope they can get to the bottom of things and that you feel confident with the diagnosis and treatment.

Oh Roz, hope they figure out soon why you are not feeling well. Diverticulitis can be very painful.

So far all of my tests are negative. The pain is worse today. I'm hoping it isn't kidney stones because I've heard those get really painful when they are passing.
I think I am going to buy packaged chips or pretzels this Halloween to hand out so if there is anything left over the DD's will take them home to put in lunches. I just can't be trusted with candy in the house.
