Can someone explain to me how to make taco chips and pizza chips? I need more creative meal choices and those sound really good!

I'll try to tell you how.  I haven't made them in a while and can't find my recipe.

I use shredded cheese, cheddar and mozerella, turkey pepperoni-chopped up, turkey sausage crumbles -chopped up, some Italian seasoning.  I put everything in a gallon zip lock baggie and mix it up.

Put parchment paper on a flat bread pan, preheat oven to around 400(I think).  Put a couple of spoonfuls of the mixture on the parchment paper in mounds - not too close together because it will spread out.  Bake until it gets crispy.  I think it took 10 - 15 minutes.

I have some pizza sauce that I dip mine in, but they are good plain also.  These are really good.

I know Roz and Price make them and probably have the exact recipe.

Actually, Linda I think was the originator of getting this group hooked on pizza chips, which I sometimes call taco chips by mistake.  I do basically the same thing but I use sausage flavored soy crumbles, softened with water first in mine instead of the turkey crumbles.  I put in whatever cheese I can find on sale, 2% milk or reduced fat works fine.  So shredded cheese, chopped turkey pepperoni, soy crumbles, italian seasoning, about a teaspoon, a sprinkle of garlic powder and onion powder if you like it, mix, bake.  I do mine at 350 and maybe 10-15min.  Just keep an eye on them.  They store great in the frig and heat up well or just take them with you and eat them room temp.  Basically solid protein.

They are basically meat and cheese melted in a little clumps in the oven. I make mine with the crumbles but sometimes I put a piece of ham or bacon in my blender and chop it up.  I don't add any seasonings with mine because I think the meat is strong enough but I might add some taco seasoning the next time I make them.  You could use any kind of meat you like.

I freeze mine in individual ziploc baggies so I can grab and go.

These sound like a great work snack for me. Does anyone know how many calories and carbs or do you figure it out as you make them?

I weigh them (one for an example) and if it weights 2 oz, I count it as 1oz of cheese, one of meat.  I think that is close enough.

Thank you guys! One of the hardest parts of this journey has been learning how to plan ahead. I can no longer mindlessly eat "whatever" when ever its convenient. I have to actually put time and thought into what I'm going to eat, making sure that it includes enough protein and that I've taken all of my vitamins that day. It can't be mindless any longer.
Its almost easier just to always eat the same things every day. Thats when I do the best. I can't wait for the kids to go back to school so I can get back into my own routine.
