Just for Fun - Friday
some folks are probably taking off today for a long weekend after the holiday yesterday. I worked then and am working today but am off next week.
1. We have had major rain and flooding in my area. Even so, the fireworks went on although I don't know how they got them lit. Do you enjoy fireworks? See them every year and go somewhere they have a good display?
I don't do fireworks. I don't like the noise and DH is fine with staying home. I am just glad my animals don't over-react and get scared.
2. What is your favorite picnic food these days? The 4th usually means picnics.
We didn't picnic in the rain. If I am invited to a picnic, I usually take a SF trifle. I use a SF cake mix, lots of fresh fruit and use greek yogurt, SF vanilla and cheesecake pudding and coolwhip for the creamy layers. I always take home an empty bowl.
3. Summer means vacations for many of us. What is your favorite vacation spot? Vacation activity?
I love camping with my ponies. I take off several times a year and go somewhere I can trail ride or drive. My horse trailer has a little living compartment with bed, gas cook top, microwave, frig, hot and cold water and toilet so I can camp just about anywhere but usually I stay somewhere that has showers. Blowing rock, NC is probably my favorite but I also love going to Ky Horse Park and Catoosa Ridge in Tennessee. I camp with a whole group of great cooks and we share dinner everynight.
4. What are your plans for the rest of the weekend?
busy, busy. I have a meeting this morning, then training a new staff person. There is a mini horse sale near me and although I don't plan on bringing anything else to the farm, I want to go check it out. I have a wedding in Charlotte (2.5hr away) on Sat and leave on Sunday. This non-stop rain has put a damper on getting packed but it is suppose to be slowing down.

I have enjoyed them in the past. Three I remember very vividly. One, was in the harbor at St. Augustine just after my uncles finished purchasing/building their marina there. LOVED seeing the fireworks from the harbor and seeing them reflected in the water. The second was the year we lived in the Pittsburg area...dh, dd, and I went out to the local show. But my favorite was not actually ON the 4th as I was overseas and we could not have a celebration ON the 4th in country...it was at SHAPE in Belguim.
2. What is your favorite picnic food these days? The 4th usually means picnics. RIBS, potato salad
3. Summer means vacations for many of us. What is your favorite vacation spot? Vacation activity? Favorite vacation spot...the mtns. It's why I live in the mtns now. Vacation activity...laying in a hammock and reading. Don't get a chance to do that much anymore.
4. What are your plans for the rest of the weekend? Today, lay flooring...tomorrow, heading over to Tryon to inspect the house, And then home in one day...it's not an overnight trip. Sunday, we start with putting all the trim back.

With all the rain, I kept expecting them to announce a rock slide on I 40. Glad it didn't happen. Sure would have messed up your trip plans.

Yeah, but so far it hasn't happened. However it seems Madison County is trying to sink, :) The sink hole that opened up in that parking lot was in front of a flower shop next to the funeral home that dh's aunt used when her dh passed away.
We keep asking dh's cousin if they have an ark yet.

1. We have had major rain and flooding in my area. Even so, the fireworks went on although I don't know how they got them lit. Do you enjoy fireworks? Yes, I still do enjoy fireworks. I didn't see any last night but definitely heard the neighbors...
2. What is your favorite picnic food these days? Truthfully - I can't remember the last time I went on a picnic... but if I had my druthers it would be BBQ
3. Summer means vacations for many of us. What is your favorite vacation spot? It's interesting that my favorite vacation spot is now where I raised my kids and lived for 20+ years. After I moved away I do miss it. Went there yesterday and was sad to leave.
4. What are your plans for the rest of the weekend? this morning was productive. got my shed "decorated"... meaning got fake windows, flower boxes and shutters put up. doesn't look so bare and lonely now. going to my DD's house and fixing a screen for her and dropping off the trailer. Tomorrow is helping her move. Hopefully Sunday is a down day;.. relax, read and do whatever I want without a "to do" list.

When I was working one on one with a client, we did picnics a lot because she enjoyed them. These days my picnics are camping and that is about it.
Interesting about vacation spots. I grew up in Fla and still love a good clear sand bottom lake but never have been much for the beach.

1. I love fireworks, can't get too many. Even with the high fire danger here there were fireworks at the state fairgrounds, parks and the local ball field. We went to the garage at work and sat on the roof deck watching the fireworks all around us. The animals are all inside only so they've never seemed to be bothered by the fireworks..
2. What is your favorite picnic food these days? The 4th usually means picnics.
We were supposed to go to a BBQ but didn't make it because of the heat. Stayed home, grilled some chicken and had low fat potato salad.
3. Summer means vacations for many of us. What is your favorite vacation spot? Vacation activity?
I love to go to the beach. Every few months DH and I will take the dogs and go to the coast and play for a few days.
4. Working in the yard in the early morning and staying inside the rest of the tme.
I haven't made potato salad in ages but I have changed and now use 1/2 greek yogurt, 1/2 mayo when I make cole slaw, chicken salad, etc . I bet you could do it in potato salad too. I watch my carbs much closer than I do fat.

I didn't make the potato salad, a friend did and I only had a couple bites. Just enough to satisfy her that I did like it since she made it "specially for me". SIGH.
When I was on soft food stage, all my pouch really liked was mashed potatoes, so at this point potatoes hold little interest for me. I used to love potato salad but my tastes have certainly changed since surgery.
I think i will make some chicken salad tonight for the weekend using greek yogurt and mayo mixed. That sounds really good. Thanks for the idea.
1. It has rained almost everyday now for over a week. Storming this afternoon and tonight. I love fireworks. Our City and County stopped doing them several years ago, but our neighbors usually do some and we heard them last night, but didn't see any.
2. Picnic foods - haven't done a picnic in a long time, but I love ham and potato salad(I do cauliflower salad now instead of potato).
3. I love to go to the beach haven't been in two years now. DH and I are talking about going after the summer season is over. I have so many good memories of going to Florida with our families and playing the miniture golf.
4. Plans - I took a vacation day today. I did get to pick blueberries off our bushes today in between the rains. We were going to go to the mall and walk around, but after we headed out the rain started again so we just came back home. We might go tomorrow. Other than that I need to work sometime this weekend, wash clothes and do some cooking for next week.
