Yay TGIF!! :-D My menu looks a little like yours - ie not much food. I was just waayy too busy. I didn't get too hungry except when waiting for the chicken casserole to finish cooking!! ;-)

Hey Kelly,
Just peeked at your menu. If I'm reading it correctly you got about 90g of protein. You should aim higher over time, but no need to rush. Great job with fruits and vegetables. I struggle with getting enough in when I'm concerned with protein, and I've never been a munch on cold, hard vegetables as snacks kind of girl. I just add fruit where I can and am sure to get veggies at dinner. When I remember, I pick up a salad or slip veggies into eggs.

Been to all the garden shops looking for stuff for the garden. I bought tomatoes, peppers, eggplant, cukes, squash, cantelope. Still need a few things but will have to go to a speciality shop. I want to grow pimentos this year for pimento cheese. Yummmm

I finally got my whoopie pan and made the carbquick roll. It was different, not bad, just different. Very soft flour ish, not whole grain texture or taste but it does have fiber. doesn't taste legal but Linda is doing great with them so we will see, It was certainly easy enough to do once I got the supplies and the 6 rolls will last me a week or so.
