Hi everyone! Thought I'd get this started. I hope Roz is having a fantastic time in Disney.

I've been known to leave my breakfast at home and happened to have lunch with me the couple of times it happened so I had lunch for breakfast (chicken for brekky IIRC).

I always tweak a recipe to help with the stats. I used chicken thighs because they are not so dry, Carbquik instead of the Ritz Crackers and I used the Greek Yogurt Cream Cheese. I do not add the Spaghetti sauce and it is still moist enough for me.
They taste really good. they are a little trouble to make, but I made about 10 thighs and will probably freeze some for later. Some days I can eat a whole one and some days I can only eat 1/2.
