I'm not a baker, but your enthusiasm has piqued my interest.
I don't have much of a healthy snack. But at night, I do enjoy a nsa fudgsicle or Arctic Zero ice cream.
Great thread idea

35 pounds of regain!!! 30 lost!!! Just a little more to go.
I had to stop making the pb cookies. 2 wasn't enough and I would get them out of the freezer and eat them frozen.
I try to not snack, just have my planned meals which is still 4x a day plus my protein drinks. I guess I think of my drinks as "snacks", esp the frozen shake at 9pm.

Or you'll get bored of them like me. Adding raisins does make them more interesting but obviously raises the carb count :-D

I like to take 0% FF Greek Yogurt and mix different flavorings with it - make a cheesecake out of it, perhaps sugar free jelly, even Syntrax fruit flavored protein powder mixes very well with it.
I'm like Price - I can't do the protein cookies, cakes, etc. I just won't stop until they're gone. I made a molasses cake when I was in Michigan (NOT a WLS friendly recipe, but wasn't awful). Ate 2 pieces and gave the rest to my mother.
I also have to refrain from snacking. My snack of choice at work lately has been baby carrots. Otherwise it's all carbs...
