Homemade Chicken Cordon Bleu
VERY DS friendly!
I used boneless chicken thighs as that was what I had. Managed to flatten them.
Then added 2 thin slices of ham (Costco brand)
A good size slice of cream cheese
A bit of chopped broccoli (had it on hand)
Roll and place toothpicks to keep it together.
Then mix honey, mustard, and a package of dry ranch dressing and pour over the pieces.
Bake at 350 for about an hour.

Roz, it WAS...dh loved it.
Said the recipe was a keeper. I had been using the sauce for baked chicken and he was the one who suggested using it on this.

Not sure but there has to be something. Maybe a cream sauce?
I use honey cause of ALL the sugars, it has the least effect on my blood sugars. And I like the sweetness it gives.

Here is a new chicken recipe for you. I posted below but didnt know if you would look back into this post.
I am making pepperoni chicken tonight for my guys. I just broil boneless chicken breast or thighs then melt motz cheese on top then place pepperoni and broil again till crisp. I serve it with spaghetti noodles, sauce and salad for the guys and eat a little plain for myself

If you have a Costco near you, they do packaged chicken...the thighs with bone and skin are 4 to a package and 6 packages to a set...they are set up so you can cut the packages apart and just use what you need. The boneless/skinless are 5 to a package. They also have packaged pork loin roasts, 4 to a package and each is individually wrapped...about 2 lbs for each one. That size is perfect for us...we end up with leftovers but not a huge amount.

Nope, the cheese did not melt out (most of it anyway). I did have a wee bit fall off as I picked them up to put on the plate but not sure those pieces were in as good as the others.
Thankfully I do not have anyone to cook for other than another DS'er...so we both eat basically the same.
