I made up this recipe from readily available ingredients here in America - I'm not sure whether commercial sofrito is available in Israel but its easy enough to make in a food processor - garlic, onions, peppers ,cilantro and salt are the basic ingredients and then U blend in a food processor and use spoonfuls in Ur cooking all week . If U make it at home it doesnt need to contain salt either ... and can also be used as a base for fresh salsa and all kinds of green Spanish type and Indian type sauces .
One cup chickpea flour mixed with 2/3 cup cold water and 1/3 cup commercial sofrito . Let sit for close to one hour for grainy chickpea flour to soften .
make balls and bake on a pammed pan in an oven or (even easier) make teaspoon patties and "pan fry "em with a bit of Pam like latkes . I usually don't eat my falafel with pita bread but I do enjoy a greek type cucumber/yogurt garlicky dipping sauce called Tzaziki sometimes on mine . Sauces aren't really necessary with THIS falafel because unlike most... its neither too dense nor too flavorless ... its soft , green and delicious .
The fresh vegetable addition cuts the calories down close to one-half . Incidentally theres a very popular organic n kosher Dutch ! restaurant chain thats making a killing using something very like my recipe for their falafel mix... only they deep fry theirs , give U an unlimited salad bar on top and a pita wrap and charge U seven bux for three falafel balls .
Even THATS a great healthy meal if U can get it though .. but try making this at home . U'll be amazed . .
Low carbing it DOES get people into trouble blood sugar wise I'm convinced . The RIGHT carbs give U great all-day energy ... KEEP U from wanting unhealthy " snax" and wanting to graze in general . A meal of high fiber fat -free falafel cleans out my insides BEAUTIFULLY while energizing me all day ....
Incidentally Kids of All ages seem to love falafel . Its a VERY cost effective healthy and filling family meal ...
