Here's a basic recipe. Please add some of you own ideas and post. Tell us how you like to work Brok's Pizza into your weekly meal planning.

Brok's Pizza
Crust Ingredients:
8 oz shredded five cheese Italian blend (Kraft has a great one)
4 oz shredded cheddar
3 eggs
1-2 tsp onion powder
Mix all ingredients together in a large bowl. Prepare a baking pan (standard cookie sheet works) with either parchment paper or Reynold's no stick aluminum foil. Preheat the oven to 450F.
Spread cheese mixture as thin as possible into the pan -- I make a rectangle shape. Bake for 10-15 minutes. Check at 10 minutes to make sure it's not turning too brown. If it is turn oven down to 400F. Remove from the oven and ensure it is dry underneath.
Add your toppings -- I use a little sugar free tomato sauce, roasted red pepper, onion, mushrooms, turkey pepperoni and mozzarella cheese. I sauté the onion and mushroom before I add them on -- but it's just personal preference.
Change oven to broil and place in the oven until the added cheese is melted and bubbly. I cut mine into 8 pieces.
Just the crust has 120 g protein. You could load this up with a ton of meat!

Finishing payroll, finishing packing and I am headed to Ky this morning. I've dropped from 121 to 118 as of this morning which is still high but only a pound instead of 4. I have a good lineup of food for breakfast and lunches and will stick to my plan. I'll check in when I can.

I use 1-2 tsps of the Italian Seasoning and garlic powder. I used 8 ozs of Low Fat Mozerella Cheese this time. When I add my toppings and broil it, I sprinkle just a little more cheese on the top.
I'm having my bone density test this morning. The years are going by so fast now!!
Work today, I got most of my work closet and 1 filing cabinet cleaned out and organized yesterday. I need to finish the closet and pull some things out of another filing cabinet and box them up to make some room. Then I need to work on time sheets for end of the month payroll. Working on a list of questions for the meeting tomorrow with the other library director. I'm excited about this opportunity, but a little nervous because I just don't want to get stressed out about work anymore.

Last week we went to an Italian restaurant for lunch and I got a gluten free pizza. It was a personal size with 4 slices, each slice just the right meal size for me. It was delicious and I was looking forward to having 3 more meals with it but after having some for lunch the next day I made the mistake of leaving it out on the counter and Larry, my idiot cat, knocked it off the counter and the rest of the animals must have had a feast because there was nothing left but the box. The damn thing cost $11.95 for a small pizza so I wasn't happy.
They do sell gluten free pizza crust, too, and I may try that, too, but to tell you the trust that last pizza pretty much satisfied my cravings for pizza for a while.
I got on the scale today and I am down 2.2 lbs from Sunday's weight. I am thinking of starting a maintenance thread for Lightweights. I know we already had one but I would like to see it pretty regular. You would think that after over a year of maintaining, or trying to, I would have a better grasp of this thing but it is still a daily challenge. It is always changing and evolving. My weight is within about 5 lbs or so from my lowest and that is fine but I still wouldn't mind putting on a few pounds. I have tried eating more often, eating higher calorie, higher fat, higher carb things and it doesn't seem to make a long term impact. I have tried planning my meals, not planning my meals. I am trying to eat like a DSer, which to me is pretty much freely with protein and fats and lower on carbs. I have added sugar free candy pretty much every day, not a lot but at least a serving a day. I am eating nuts and cheese like they were free foods on Weigh****chers. I guess my body likes this range. On one hand I am impressed at the stability of my weight and on the other I am frustrated that I am so low.
I also feel like whining because I am sick. I have been fighting a cold all week and I feel like the cold won. I was taking Zicam and I gave up on that. My head is stuffed, my nose is running, my throat is sore and I ache all over. Over the counter cold stuff doesn't seem to help. Maybe I shouldn't bother with Dollar store meds, lol. I am sure I got this from my boyfriend. I just want it to go. I started with the runny nose last week and by Thursday I was sick. I still worked this weekend but by yesterday I was totally wiped out. Any hints on making this go away faster?
