Actually, just because a protein is denatured, that doesn't mean it's destroyed. Denaturing is largely cosmetic.
For example, when you fry an egg, the egg "white" changes from clear to white. That is because the heat denatures it. But the egg white still has as much protein as it had before and it hasn't been destroyed or made to be unusable by this process.
Personally, I think the nutrtion industry tries to make it as complicated as possible and introduces distinctions that aren't real in order to get us to pay more for their expensive products that really aren't that much better for us.
