Very Easy 3 Bean "Chili" X Post

I'm not much of a cook and when I do cook I like it very simple.  Too many ingredients complicate things for me.  I decided to make this because I had a lot of beans leftover.  I used dried beans that I cooked but you can use canned, too.  I think I used 8 cups of beans total but I made a large batch so I could freeze it for lunches.  If freezes great and also makes great leftovers.  If you don't want that much you could always halve the recipe.
I also used Rotel's because they were on sale but their cans are very little.  You could probably get away with 3 cans of regular diced tomatoes and chili or even use a can or two of regular diced tomatoes if you don't want so much heat.  I drained about half the liquid out of the tomatoes because otherwise it gets too soupy.  Next time I will drain even more so it will be thicker.
This is very high in protein which is why I made it.  You could use whatever beans you like and you could use ground turkey if you prefer.  And of course you can adjust the spices to taste or add different ones if you like.  I have made it with chopped onions and minced garlic but the powders are fine, too.

Very Easy 3 Bean "Chili"
3 lbs hamburger
2 1/2 cups each kidney, garbanzo, black beans (about 8 cups total, you can use canned, too and whatever kind of beans you like)
4 cans Rotel's diced tomatoes and chili
1 tablespoon chili powder
1 tablespoon cayenne pepper
1/2 tablespoon onion powder

1/2 tablespoon garlic powder
1 tablespoon cocoa powder
salt & pepper to taste
Brown hamburger and drain.  Add beans and diced tomatoes and the rest of the ingredients and heat to boiling and turn down and simmer covered for at least an hour.  It should have plenty of liquid but if not add some water.  I have also made this with chopped onion and minced garlic but it is fine with just the garlic and onion powders.  You can cook this as long as you want to blend the flavors and it freezes very well.

I'm not really sure how many servings this makes.  It depends on what you call a serving.  You could also make this in a crock pot and just let it simmer on low all day.  It is pretty much cooked before you simmer it, the simmering is just to blend the flavors together.

Hi TAZZ...I've missed you!!!  The chili does sound easy and that's what I go for too!  I don't like hot chili (love Wendy's chili) so is there anything on the list I should leave out or adjust?

I have 3 pairs of jeans that are size 2 and small 4's that you can have if you want them.  They are in very new condition but they are from my low stage.  They are a darker blue which is one reason they are new.  I prefer the washed out look.  They are all DKNY's and have a 26" inseam.

If you can wear them send me a private message with your address.

Hi Roz, I sent you a message about the jeans.  They sound great.  I have a jean feti****hink.  I have a closet of them and I try to wear a different pair every day but I have my favorites :)  Now that I'll be working I won't be able to wear jeans to work but as soon as I come home on they come.  Seriously, I probably have at least a dozen pair in my closet, sizes 0 to 4 so these should be perfect.  Let me know what the shipping costs.
If you don't want the chili to be so hot I would just use regular diced tomatoes and drain most of the liquid so the chili won't be so soupy.  Adjust the spices as you like, maybe a little chili powder and no cayenne.  I kind of think it reminds me of Wendy's chili with a lot more heat.

it's about that time of year, huh.  A pot of chili sounds pretty good.  I have some dried beans my DD sent me that I need to cook then using some of the leftovers for chili sounds great.  I have been using TVP in place of at least part of my ground beef, chicken or sausage lately since I found the flavored TVP.  DH has never said a word about it, don't know if he can even tell.  Thanks for the receipe, Tazz.

That sounds good.  I usually just use the packets of chili mix and add hamburger/sausage, beans and tomatoes.  I made a big pot today to eat on next week.  I love chili!!  I'll have to mark this for next time.
Thanks
Linda
