Eggface Zucchini "Pasta"
So, this week I tried replacing pasta in a few dishes with zucchini, the way Michelle does at eggface.
I made lasagna rolls using grilled flat zucchini slices, and tonight, I made chicken "noodle" soup, replacing the pasta with zucchini "noodles" (cut with a julienne peeler).
It was SOOO good. Seriously.

Makes me want to grow my own zucchini. Is it too late this season?

Depending on where you live, yes, it is too late. Zucchini can't take cold or a frost like broccali or kale can. When it comes in, in the garden, you will find lots of ways to use it or friends to give it to. It doesn't freeze well so you have a bunch all at once to use.
