AMAZING Protein cake/bar recipe!

Delicious Peanut Butter Protein Bars

Makes 8 generous servings 

Ingredients

2 scoops of vanilla protein powder (I use New Zealand Whey)

8 tbsp PB2

1 tsp pumpkin pie spice

1/2 tsp baking powder

1/8 tsp salt

2 tbsp Earth Balance, melted (or butter)

1/4 cup unsweetened chocolate almond milk

1 tsp almond extract

1 egg

2 tbsp egg whites

12 drops of stevia (or to taste)

Directions

1. Pre-heat oven at 350 and prepare a glass baking dish with non stick spray - I didn't have a glass dish so used a 9 x 9 non stick pan.

2. Mix all dry ingredients in a bowl and set aside.

3. In  separate mixing bowl, place all liquid ingredients and whisk together

4. Add in the dry ingredients and mix

5. Scrape down your mix into your sprayed glass baking dish

6. Place in oven for 15 minutes or until your protein mix is fully baked

7. Let cool for ten minutes, then cut your protein bake into 8 bars and place on a cooling rack

Per Serving (1 bar)

Cals 80, Total Fat 4.1g, Total Carbs 3.3g, Dietary Fiber 1g, Protein 9.4g

I increased the protein powder to 90g and used Syntrax Matrix Simply Vanilla, substituted the Stevia with Splenda, used Coconut oil in place of buter and used Watkins Peanut Butter Extract instead of Almond Extract.  I added a tablespoon or 2 more of almond milk due to the increase in protein powder.  Next time I may add apple sauce and cut down 1 tbsp of coconut oil to reduce the calories a bit or even add in some greek yogurt.

So my stats came out to:

Per Serving (1 bar)

Cals 108, Total Fat 5.6g, Carbs 3.6g, Dietary Fiber 1.1g, Protein 12.5g

The stats on these are great and they taste soooooooooooooo good!  I found the pumpkin pie spice really overwhelmed the peanut butter so I'm going to omit it next time.

Since my pan was bigger I should have reduced the baking time a little as well.  You really have to be careful when you're baking with protein powder because if you don't add enough moisture or you bake for too long things end up being VERY dry.

If you were going to make it DS friendly with more natural fat, other than, real butter and peanut butter, what would you do?

Personally I would still stick with coconut oil rather than butter, IMO it's a good fat that has a lot of beneficial properties.   You could add greek yogurt or some nut butter to add more fat and protein.  To be honest, I'm not very well versed in DS requirements other than high fat and low carb.

That's about it. What about 2 eggs rather than 2 Tblsp of egg white? Are the egg whites to help fluff them up a bit? I have this idea that they might taste like JayRobb peanut butter protein bars if you left off the pumpkin pie spices. I love JayRob bars.

I think the egg whites are used in place of another egg to reduce the calories?  I don't see any problem in using an egg instead.  I may try using just all egg white for myself next time to cut the calories a titch. 
 
At 108 calories for a largish size piece it's not that important to me to save a couple of calories.

I'm definitely going to add a container of unsweetened applesauce next time to see if it'll make it even moister. 

I've never tasted a Jay Rob bar, if they're anything like this I may have to try one.  :0)
