Great Recipe - Chile Rellenos Casserole

I tried this recipe today and it was delicious!!  Thought I would share with all of you.  It is not too spicy hot.

Ingredients:

  • 1(or a little more) pound ground beef
  • 2 (4 oz) cans of whole green chilies( Iused 3 cans)
  • 6 oz cream cheese (I used 8 ozs)
  • cumin, paprika, chili powder, garlic powder, salt, cayenne pepper, dried minced onion
  • beef bouillon cube & water
  • Mexican blend shredded cheese
  • Optional: a little fresh chopped cilantro
I used 1 tsp each of the spices.  1 packet of bouillon cube and just a little water.

Brown ground beef and drain any grease. Add dry seasonings, a little water, and the beef bouillon cube and let this mixture simmer while you prepare the chilies.

Open your green chilies by splitting lengthwise then spoon 1 Tbsp of cream cheese into each green chili and put into a casserole dish.

Add the meat mixture over the top of the chilies and cook them in a 350 degree F oven for about 20 – 25 minutes covering them with Mexican blended shredded cheese for the last 5 minutes.

Thanks for this.  I was actually looking for a chile rellenos casserole and I made one with eggs.  Not bad but this is more what I was looking for.  I just need to buy the chilies and cheese and it should be ready to make.

 Thanks for the recipe !  I've wanted to make chile rellenos for like FOREVER - can't wait to try it .   Do you think the dried reconstituted poblano chilies from Mexico would work or  do I have to find fresh ones ?

I used the ones in the 4 oz cans.  They have the minced ones and the whole ones.  They are small cans in the Mexican aisle at Walmart.

I just finished my dinner and they were great!  I love stuffed peppers and these hit the spot.  Instead of canned chilies I used fresh Anaheim peppers.  It was a bit labor intensive because I had to roast the peppers and then skin them and remove the seeds but it was worth it.  I did forget to simmer the meat mixture but I don't think it hurt anything.  It came out pretty hot but not too hot for me.  And the best part is I have enough leftovers to last a while.  I hope they freeze well but I think they should.  Yum!
