Hi Roz,
Yesterday was really bad - I did not get back on and post what I did.  I think I ate everything I could get my hands on and did not exercise.  But today is a new day and I got up and got started on the right foot again today.  I did learn a new trigger for me and will never ever purchase the little Weigh****chers Lemon cakes - the stats look good if you can eat just one(that did not happen with me)...

I get off at 3:15 today -yeah!!  Have to pick up DGD#2 because DD's fifth grade class is on a field trip and won't be bac****il after 6pm.  SIL can't get off work early today either.

I've avoided the lemon cakes because I know I can't stop at one.  Dosen't the Cinnamon rolls do that?  That's why I haven't tried those either.  Sweets and I just don't get along (or maybe we get along to well...LOL)

I am loving the Pizza Chips but I think they need a new name....LOL!.  I can enjoy them guilt free because they are all protein.

Grandbaby time....love it!  I am so enjoying Phoenix.  He is such a good baby and such a cuddler.

My DD who had the tubal and then lost one before Christmas is pregnanat again. She is only a month out.  They have been doing blood work every 48 hours and her levels have been going up so hopefully they continue to rise.  She is scheduled for a sonar for next Friday so they can make sure the baby is in the sack.

Good Menu!

Roz, hope everything goes good for your DD.

The cinnamon rolls are not that sweet.  The carbquick has a little bitter taste to it and you use Brown Sugar Splenda as the sweetner so there is not any real sugar.  Since I found the Laughing Cow Cinnamon Cream Cheese wedges I use that instead of making my cream cheese topping.

I will never ever ever buy those lemon things again.  I am so ashamed that by the end of the day I had eaten the entire box - I should have just got a cookie and ate it!!

I can't have a whole box or bag of anything around the house that I like.  What is the cinnamon roll recipe?

Here is the link and the recipe.  I don't add the nuts and I use a lot less butter, just enough to smear on the rolled out mixture.  I use the Laughing Cow Cinnamon Cream Cheese now instead of making the icing also.  It does take longer than most things I like to make.  I also cut mine thinner and it makes around 12 - 14 instead of 6 - 8 so I only cook mine between 10 and 15 minutes or they will burn.

Carbquik Recipe: Quick Cinnamon Rolls

Ingredients:

Cinnamon Rolls:

1 2/3 cup Carbquik
1 Tbls Splenda
1/2 cup low-carb milk (or 1/4 cup cream and 1/4 cup water)
1/2 cup softened butter
1/4 cup brown sugar substitute
3 teaspoons cinnamon
1/2 cup nuts (Optional)

Icing:

1/4 block of cream cheese
1/3 cup UNSALTED Butter
3/4 cup Splenda
1 teaspoon vanilla

Instructions:

Cinnamon Rolls:

In a bowl combine Carbquik, 1 Tbls Splenda and mil****il moist. Let it sit for a minute. Stir again until well combined. Sprinkle some Carbquik on a kneading surface and turn dough onto surface.
Knead for approx. 3-4 minutes. Add more carbquik if necessary to keep dough from sticking.
Roll into a rectangle shape. (It helped me to roll only in one direction instead of back and forth.)
Spread butter over entire rectangle, then sprinkle with cinnamon and brown sugar substitute.
Roll up lengthwise and slice into 6-8 rolls.
Bake at 400 degreees for 20 minutes. Spread icing over top and serve warm!

Icing:

Whip on high speed for 2 minutes

My favorite is the South Beach Diet Mango.  It's just a soft mild taste.  I haven't been able to find it for a long time.   I didn't like the Roadside Lemonade but If I had used flavorings I might have been able to get it down.  I like my Lemon Tea plain (it's a good thing).

Good Totals!
