Not sure what a MIM muffin is.

I do a flax muffin which I may just have for breakfast this morning.  Thanks for reminding me.

1/4c ground flax seeds
1/4t baking powder
1 pkt sweetner
1/2t cinnamon
1 egg

Put dry ingred in a large mug, mix well, add egg and mix again.  Nuke for 1 min.  Turn out on plate and enjoy.  I have added blueberries at times.  I usually eat it with light cream cheese and SF jelly.  I could only eat half for a long time but can do the whole thing now but it is very filling.  Go slow.  Some folks seem to have issues with it.

One of these days I am going to get brave enough and try this one again. It was very tasty
until the foamie**** It was months ago but the memory stays close. LOL.

I tried this when on Atkins. I liked it, haven't made for quite a while. I think MIM means muffin in a minute.

MIM is short from muffin in a mug/minute.  I'm going to get the ingredients and try these :)
