Roz, I have a feeling that new baby or the other grand babies are getting a lot of your attention today. lol

MENU: (DS Maintenance Mode)

S - Fage yogurt w/blueberries and a protein coffee (30g)
S - high protein bread toast w/cream cheese
L - protein shake (30g)
S - NutThins w/cream cheese and spices
S - a few fries and a few bites of cheese burger

Hi Gina,
I sure hope the weather wasn't too bad for anyone today.  It passed below us all we got was rain.

Here is what I've done today:

B:  Protein Decaf Coffee
Walk/Jog
S:  Lemon Tea Protein Drink
S:  Water
L:  Steak/Chicken pieces w/ cheese melted on them
S:  Lemon Tea Protein Drink
S:  1/2 graham cracker
D:  Stuffed Bell Pepper - oh my gosh this was delicious!!  You could not tell that I substituted cauliflower for rice.  DH ate 2 and DGD#2 who is a very picky eater ate part of his and 1/2 of mine!
S:  Protein Decaf Coffee
S:  Strawberries or Graham Cracker w/ Red. Fat Peanut Butter

Vitamins:  Done
Water/Fluids:  100 ozs
Miles:  2.6 miles walk/jog

Could you post that recipe?  I've been looking for an easy stuffed pepper recipe.

Sure, here it is.  I got it from The Food Network Emeril Lagasse's Mr. John's Meat Stuffed Bell Peppers and modified it some.

6 Green Bell Peppers, Tops cut off and seeds removed
4 tbls vegetable oil
1 cup finely chopped yellow onions
1/2 cup finely chopped green peppers
1/2 cup finely chopped red peppers
1 pound ground beef
1 pound ground italian sausage
2 tbls minced garlic
1 1/2 tsp salt
1 tsp black pepper
Pinch of Red Pepper Flakes
2 cups grated cauliflower - I used 3/4 of a large head
8 ounces tomato sauce

Preheat oven 350 degrees.  In a large pot of boiling water, parboil the pappers until just tender 2-3 minutes.  Remove with a slotted sppon and allow to dry on paper towels

In a large saute pan or skillet, heat the oil over medium high heat.  Add raw cauliflower, onions and bell peppers and cook, stiring until soft about 3 minutes- it took me longer than 3 minutes because I had the cauliflower in here also.  

Recipe says to add the beef, pork(sausage) into this- next time I would brown the meat in a separate pan so I could drain the grease off of it and then put it in the veggie pan.  Add the garlic, salt, black pepper and pepper flakes.  After meat is done and mixed thoroughly with veggies & seasonings add the tomato sauce and heat.  

Pour enough water into a baking dish to just cover the bottom, about 1/8 inch deep.  Stuff the bell peppers with the mixture and place in the baking dish.  Bake until the peppers are very tender and the filling is heated through 25 to 30 minutes.  Remove from oven and let rest for 10 minutes before serving.

I had some of the stuffing left over and I will probably just eat this - it was so good. 

I did not do the calorie count, but I would not think it would be that bad since it is an entire meal.

Thanks Gina!

You are right about me being busy with the little ones.  DD took the baby to the Drs. last night because she didn't think he felt good and she was having trouble waking him up.  Then they rushed him to Pgh. Children's Hospital.  3 yr. old has had a fever and cold an apparately the baby caught it.  They gave him some fluids and then sent them home late last night.  He was fussy all night and they were so exhausted that I left them sleep and I took care of the little ones.  He is much better today.

This afternoon we went to the Better Homes and Gardens Home Show.  They are going to be starting on DD's house in a couple of weeks and she has a lot of decisions to make. I think the show confused her even more.

It is 8:30 and we are just having dinner.  Everyone else is having pizza but I got chili's.

Protein:  Matrix Mint Cookie
Lunch:  Bean Soup from Applebees
Protein:  Syntrax Lemon Tea
Snack:   1 small bite of homemade fudge
Dinner:  Small Wendy's Chili
Protein:  Syntrax Lemon Tea
