Potato Substitutes

Just an FYI, turnip (not rutabaga) are really hard to mash and quite watery when they are mashed.  I ended up having to use my magic bullet to mash/puree it.  If you are making a big batch I would be tempted to add 1 potato to "dry" it out a bit and firm it up.  

I think they would be really nice roasted, will have to try them soon!

Try cauliflower.  If it's not overcooked, the flavor can be quite mild.

I have been using cauliflower.  I make the mashed, cheesy and even baked like mac & cheese.  I wanted to try something different.  Thanks for the suggestion.  I use it as a substitute for rice and pasta.

I am a little late responding on this, but thought I would share something yummy with veggies. Kale/spinach chips. Same thing as roasting the veggies. Sprinkle with olive oil and salt and cook at 350-400 for about 15 minutes. The spinach does take alot longer as it has more moisture. They are really really yummy. I have not figured out the calories etc. But they are certainly very healthy and a nice change of pace. The kids even liked them.

Thanks, I'm going to try the spinach chips this weekend.  I think Price makes these also.

I would not think they had many calories at all.
