Yes, actually I got him on Myfitnesspal.com. He set up his own account and will be doing his own tracking. He's actually pretty excited about this - I think it gives him a level of accountability.
And... what its doing for me is making me track my food again too. Good accountability for me too. We'll be measuring, weighing, etc. Told him no cheating either!!

Buffalo Chicken Salad - grilled chicken breast over greens with hot sauce drizzled over the top and a small side of LF ranch
Turkey (or any other kind of deli meat) rolled up with cheese
Fajitas minus the tortillas
LC wraps with any type of filling--deli meat, taco meat, fajita meat, etc.--you can also turn them into quesadillas or pizzas
Roasted chicken/turkey with asparagus, side salad
Lean red meat with green beans, side salad
Snacks:
Almonds
Beef jerky
Celery sticks with PB or LF ranch
pickles
cantaloupe
honey dew
I'm guessing that if he is quite overweight then he is vit deficient. It cant hurt to get him on a vit plan - a multi vit, b12, vit d, potassium, etc.

This is the season for huge salads and fruit snacks. There's no better time of year for this. Load up those salads with everything that Tom loves and then top with some chicken, tuna, salmond, beef... anything that he likes. I keep containers of organic peppers/cucumbers/cherry tomatoes/lettuce/red cabbage and anything else that I get at the farmer's market. That makes it so simple to throw together a salad. Simplicity is my biggest key to success with this.
One of my favorite low carb meals is a big salad topped with ground beef, a bit of sour cream, a touch of avocado and then lay on the salsa. It's like a taco bowl without the carbs. I also like the 100% Whole Wheat Low carb/high fiber tortillas. 80 calories, 18 (I think) carbs, 12 fiber and even some protein making them nutritious. I find mine at costco or safeway etc.
I too used the crockpot for things like chili. I make it with meat, beans and tomato products. Not the lowest of carbs, but I don't think that's where I gain from. It can also be thrown on top of a salad.
I used to make a chicken dish in the crockpot where I threw on a can of beans and a big jar of Pace Picante sauce. It all cooked down great.
I recently found the Flat Out wraps so if Tom likes his bread, that will do nicely for wrapping greens and meat/cheese. You can also make an individual pizza on one wrap.
If you have Costco, I get individual 6 oz marinated Salmon filets, 6 oz individual Tilapia with Thai seasonings. They're both terrific thrown on a tortilla that has salad on it. Eat your fill, then roll it up!
I'm not a huge fan of chicken, but I cook up several pork chops at a time so that I have a few meals prepped ahead. I cook a few that are rare so that I can heat them up without drying them out. If I cook a steak, I also leave it very rare so that I can reheat the leftovers.
Greek Yogurt is low carb and can be used in lots of recipies. It's great with berries.
Don't forget about roasted veggies. Yesterday I roasted up a head of cauliflower. This week I'll portion it out and sprinkle with parmesan cheese. OH YUM! You can also use cauliflower to make low carb mashed potatoes.
Have you looked on the Low Carb group for recipies? Revolution rolls (oopsie rolls) are low carb and can be used as a burger bun. I know I posted the recipe on the low carb group board.
The cooking channel has a lot of low carb shows these days.
Tom may find that his appetite goes down when the white carbs are out of his system.
This may be TMI, but low carb can cause a big case of constipation, which is why all those veggies are great. He may need a little help from Benefiber etc. OKOKOK, so I did warn TMI! :)

I need some of these ideas and will check out the low carb recipe site. I am 4 months out and starting to get VERY bored with what I am eating. I havent gone above 20 carbs in a meal or 7 grams of sugar and have not tried any bread or pasta yet. I am getting tired of my regular standbys of meatloaf, baked chicken, and meatballs in the crockpot. I started looking on eggface and bariatric foodie last night. It is hard though as I cook for one and eat such small meals still. I am still using my little dipper crock pot!!!
This weekend I hope to find three new recipes I can try and like. I love cooking so hopefully I can find somethings I will like that I can make a small batch of.

this time of year marinating lean meats for 24 hours and then grilling/searing them works great ...
you can do a LOT and freeze the leftovers and use the slices for tacos , sandwich melts , fajitas etc.. or just to top salad .. don't hesitate to throw somefresh veggies on top of that grill too ... and baste wit the meat marinade or something else like fat free promise n butter buds ... they can be AWESOME tasting slightly caramelized ... dont overcook ( meat is done to slightly pink in the middle when it springs back under Ur fingers ) and let the meat rest a few minutes ( like five ) to draw th e juices back in before slicing .
the meat i buy is generally eye round beef ... or filet mignon or loin of pork or just plain chicken breast . Itrim ALL visible fat religiously . Then I MIGHT grind some in my food processor for meatloaf or burgers ...or meatballs . If i buy groundturkey its ALWAYS the 99 % lean kind nothing less . Ud be shocked at the fat ( and skin
) content of the others .
Fish - tilapia, this new white fish in bags at walmart ( Swayze ? ) DELICIOUS - BETER than Tilapia ! shrimp ...
I also do a lot of stir frys again with no oil just using organic chicken broth as the base . Start out stirfrying the cut up onion , garlic and ginber with a bit of the stock .... then when they are ready ( you just kep adding a bit of stock so they dont burn ) ... add Ur spice mix ( say .. a spoonful thai green curry and tom yum each ) ... then more stock and a packet of butter buds ... then U add Ur prepared meat and veggies in the order they tak e to cook ... lastly U add fatfree half and half with a spoonful of cornstartch dissolved and a half a teaspoon of coconut flavoring...
takes about five minutes not including the prep time ...
guys really like cold cut sandwiches too and theyre tremendously lean ..just use fat free mayo and dont tell him before he eats it the first time lol... he wont be able to taste the difference i bet . Ditto for fat free mayo in white tunafish ... I love to put egg whites in there for extra protein too ... . Once he TASTES it hell probably become a convert like my landlord who actually seeks out and buys the fat free mayo now
Even so called " light " mayo is hugely fattenning ... if U can get him to switch over inside the home ... then factoring in all the extra fat added mayo U inevitably get eating out .. its like Ure always eating lowfat at least lol ...
if U have access to an Indian spice store ...I urge U to run in and buy a variety of spice mixes for say ... poaching fish , for meatballs on a stick ( shwrama ) .. for diferent tasting curries ... ( NOT everything in there is INDIAN - they have spices for everything from HUngarian food to Moroccan to Lebanese to Thai ...)
