Ooo - help me with meal planning....

Tom has decided he's had enough of carrying the weight around (maybe because I walked him into the ground yesterday and he's hurting for it).  He's feeling crappy and wants to lose some weight.  He's asked me to make him a meal plan.  Let's just say my scale doesn't register for him...

Now - I can make him a nice protein rich, low carb plan, but I'm not very versatile in my food choices and need some help in coming up with variety he won't get bored with and food that's easy to take to work and heat up (like leftovers from the night before..)

Help me with food choices that are easy to prepare, high in protein, low in carbs.  He tends to be a grazer so I'm thinking protein foods that have some substance to keep him full longer. 

He's got his yearly physical Dr's appt and I told him to get a copy of his labs.  They don't do the vits I really would like to look at, like D... but I'll take a look and see what's on there.

I've been cooking stir-frys pretty regularly lately.  The veggies have next to no calories and good carbs and fiber.  I use whatever is in the garden but onions, celery, peppers, squash, brocalli, etc all go good in it and it heats up easily the next day.

Lentil soup or any bean soups would be good.  Even a veggie beef or chicken soup would give him volume but low calories if you make them without noodles or potatoes.

I'll keep thinking.

Since you mentioned grilling, just about anything can be grilled-salmon, fish, chicken, steak, veggies, etc. Left over meat can be made into sandwiches (Whole wheat bread or flat breads) or salads (if he is going low-carb), so he can take something to work.

Pork loin is easy to prepare, high in protein, low in fat, and stays with many people for a long time. Egg dishes do too.

Prevention.com has many, many excellent easy to prepare recipes. I get some ideas from there.
 
Lentils are high in protein and high in carbs, and they have a low glycemic index, so they help with saiety.

I am very challenged in the kitchen, but some of the above things have worked for me.

Yea - I'm the crockpot queen!  LOL. I've been thinking about getting back into that

I also like making white chicken chili, need to pull that recipe out again and see what I can do to make it healthier.

One of the best things to search for when looking for these types of meals is the bodybuilding websites.  They are loaded with healthy dishes which are high protein, good complex carb with lots of variety due to them being on such strict diets

Ok - question for you.  When you count carbs, do you count simple and complex carbs differently?

I never counted carbs,  I just made sure I consumed about 150 grams of protein daily and kept my carbs low, 1/2 bag of mixed veggies etc   So  a simple meal was 1 large chicken breast and 1/2 bag of veggies. or there might be Turkey, Chicken, Fish with some brown rice and a salad with vinegar and olive oil etc. 

Of course there was other stuff too, but even for lunch it was canned Tuna, Chicken Breast etc. Sometimes made into a salad other times on Whole wheat, rye, etc for bread

Breakfast was lots of hard boiled or fryed egg whites that was all back when my thyroid worked and I could control my weight.  Eating this way without my thyroid just made me still get fat

I just made a taco bake for the family...Ground turkey browned, drain fat, put back in pan an low add taco seasoning (40% less sodium is what I use) and black beans (Less sodium one as well. stir until well mixed. add to a baking dish.  in a separate  bowl I make a  mixture of 1/2 cup carb quick (or pancake mix)  egg white to equal 2 eggs an a cup of 2% Mexican cheese.  Mix together and pour on top.  bake at 400 for 20-25 min.  I personally take the top part of the mixture off for me but it does bake through so there will be some carbs.  I add some tomato, onion, avocado and Greek yog on top. Or you can add salsa and Greek yog.  it is easy, quick and there are leftovers for lunch the next day.  I take a lot of recipes from bariatric eating, and I also look at body building websites. for me crockpot and casseroles are the easiest and most filling.

It has been hard feeding my husband..he wants to lose weight and had been trying for like 4 mo and the scale won't move!  Good luck with Tom.

Jody, would Tom be willing to start journaling his food intake for the day? It might helped him, to see where he is getting most of his calories and areas that he could start cutting out or down. Just a thought. It helps me to be more mindful of what I am putting into my mouth. There are plenty of online tracking sites that are easy to use.
