I did...I got the recipe off of here.  I didn't recheck any of the totals but I'm sure they are probably right.  I also don't know how many cookies these totals are for.  I figure they are made with almost all protein and they are pretty good.

1 Cup PB
1 egg or 1/4 cup egg beaters
1 Cup Splenda or Artificial Sweetner of your choice
1 tsp vanilla

Mix all ingredients.  Drop by spoonfuls onto ungreased baking sheet.  Press a criss cross pattern on each with a fork dipped in your sweetner.

350 degree for 8-10 minutes.  They were to soft to eat when they were warm but hardened up after they cooled.

Per cookie using egg             Cals 102  Protein 4g   Fats 3g    Net Carb 2   Sugar 1  Sodium 86mg
Per cookie using egg Sub.     Cals   97  Protein 4g   Fats 3g    Net Carb 2   Sugar 1  Sodium 81mg

Do you think that would work with the powdered sugar-free sweetener I got?  Maybe I will have to try it sometime.  of course, it is way too hot to put my oven on today!

I am not a cook or baker so I wouldn't have a clue.  This was super easy or I wouldn't have even attempted it...LOL

Roz, I made these last night using the powdered sugar replacement: Sugar Substitute, Nature Sweet Powder (maltitol powder) and they came out great!  They stayed nice and soft, even today the next day.  I will be making a batch for my cookout this weekend!  Thanks so much for posting this!

Glad you didn't dump!   I loved popsicles before WLS but now I can't stand the flavors.

Good Menu!
