Hello to all of our Lightweights!!!  If you are visiting WELCOME....PLEASE JOIN US and POST!!!!!

My boss told me to go and pick myself out a new office chair.  I was surprised...there aren't very many chairs to pick from when you are short and tiny........I never thought about that before.  It is going to be so nice to have a chair that I can actually sit back in and have some back support.
           
During the honeymoon period "Bad" carbs will slow down our losing but most of the time we don't realize thats even happening  because we are still losing and we "think" we are getting away with it, but worse than that,  "Bad Carbs" lead to bad habits and  then when we get to maintenance we start gaining.

Protein:  GNC Chocolate and Syntrax (Matrix) Mint Cookie  45g
S:  2 pieces of cheese
L:  1/2 Can Veg Beef Barley Soup 
Protein:  Syntrax Nectar Lemon Tea with a MiO Berry Pomegranate 23g
S:  Tuna Salad on 2 saltines (I'm trying to stay away from the pretzel jar!!!)

 Ooh yay! new chair!!! My husband bought me an exercise ball chair which I use at the office some days :)

S1: Perfect Chocolate protein shake: 23g protein
       String Cheese: 8g protein (this was scheduled for lunch but I really wanted to chew on something so it got bumped)
B: Cottage Cheese with pureed peaches and kashi cereal: 18.3g protein
L: Leftover CranApple Salad from Denny's with lunch meat turkey and carrots added to it as well as a sprinkle of sesame seeds: 16.4g protein
S2: Edamame, Colby/Jack stick: 12g protein
***Zumba in the Curve's circuit***
S3: ProStar Cookies n Cream: 25g protein
D: Chicken Parmesan and spinach: 31.4g protein
S4: SF Boston Cream Pie: 10.9g protein (this stuff is amazing, the "cake" is make out of eggs cream cheese and fake sugar)

Totals: 1172 calories, 38.6g fat, 61.9g carbs (41.9g net), 145g protein

Another good day.
Plenty of water.... speaking of bathroom break!!! And speaking of THAT, way off topic I know, but I'm so proud, my 2 year old is getting potty trained at the home day care he goes to (they have all 2-3 year old and are doing potty training boot camp) and he is the only kid there who has been accident free :D So proud of my little guy.

 Let me start by saying, this is not my recipe. This is Fibergals Boston Cream Napoleon from food.com

I tweaked though, but here is the original, my mods are listed below

Cream

Directions:

Prep Time: 15 mins

Total Time: 42 mins

  1. 1 Preheat oven to 300 degrees F.
  2. 2 On high speed (with a mixer), mix whites with cream of tartar until stiff peaks form.
  3. 3 In a separate bowl, mix yolks with the Splenda, cream cheese, and added salt.
  4. 4 Combine yolk mixture by barely folding it in with the whites.
  5. 5 Bake in a medium-sized jelly roll pan on a silpat sprayed with Pam for 27 minutes at 300°.
  6. 6 Cool and cut into 4 equal strips.
  7. 7 Mix pudding with milk, and layer like a Napoleon or Lasagna.
  8. 8 Mix whipping cream with 1 tablespoon of chocolate syrup and whip until frosting-like in thickness.
  9. 9 Drizzle the top with the rest of the syrup.
  10. 10 Chill for 4 hours.

Used white wine vinegar in place of cream of tartar just because that's what I have.
Sometimes I add protein powder to the pudding filling, other times I use protein pudding from focus28. I don't use a lot of cream for the topping and am actually considering mixing perfect chocolate protein powder with the chocolate syrup instead to make it a thicker icing and then diluting with water as needed.
Tonight I plan to use the cake, layer with lemon and strawberry protein puddings, maybe top with shredded unsweetened coconut and just make a lovely layer cake.
I've also layered in slivered almonds with the pudding (that was amazing, used vanilla pudding with a couple amaretto flavor drops). Last time it was chocolate fudge pudding with the cream/SF syrup topping, that was okay. Not as good as vanilla/amaretto/almonds.

Awe...2 years and potty trained...YEAH!  Potty training boot camp....that is so cute!  My DD#3 has a day care and she is getting to be an expert at potty training. 

Did you make the Boston Creme Pie or did you buy it?  Do you have a receipe?

potty training is intimidating stuff! I'm glad these other ladies have him for the bulk of it!!
