Sue, I was just thinking this morning that I haven't seen you on the boards for a while? I know how you feel with the emotional eating and the reactive hypoglycemia since both are a constant struggle for me. I hope you are getting them both under control, they are very stressful to live with.

Your totals are good!  You seem to be making good choices.

Emotional eating is the pits.  Is there something going on that you need to talk about.  Sometimes just getting it out there will help.

I've noticed that sweetening the greek yogurt makes me crave sweets so I'm trying to limit them. Sweets are a major problem for me when I'm emotional.

I love Chick's fuit bowls.  Sometimes at the mall that is my saving grace and helps me avoid getting a bad snack.  I understand why they aren't open on Sundays but sometimes I wish they were.

Sugar free coconut pie?  Did you make it or buy it? Sounds good.  I miss coconut pudding.  Do you think if I mixed coconut in SF vanilla that would work?

I wonder if you could substitute greek yogurt for the heavy cream?  You could also add protein powder to it.

Although I enjoyed the coconut custard I made earlier this month, it didn’t turn out as creamy as I had hoped. To fix this problem, I thought I’d try a cooked pudding using both coconut milk and heavy cream. For thickeners, I used cream cheese and an egg. Coconut extract was added to enhance the flavor and vanilla extra was added to boost the sweetness. I have to tell you that this pudding was much better than the custard and required no baking. The addition of heavy cream and cream cheese made the pudding very creamy and smooth. I chose to use liquid sucralose (Splenda) in the recipe because I have a big bottle that I need to use up. You can use stevia and erythritol blend or any other sweeteners you happen to have on hand.

 

Low Carb Sugar Free Coconut Pudding

Low Carb Sugar Free Coconut Pudding

    Print This!     Creamy Coconut Milk Pudding

 

½ cup unsweetened shredded coconut
¾ cup Splenda or liquid equivalent
4 ounces cream cheese, cut into pieces
1 egg, beaten
½ cup heavy cream
½ cup coconut milk
1 teaspoon coconut extract
½ teaspoon vanilla extract

In microwave safe bowl, mix 1/4 cup of cream with coconut, sweetener, and extracts. Microwave on high for one minute. Let stand.

In separate small bowl, beat egg with 1/4 cup of cream then set aside. Place coconut milk and cream cheese into sauce pan. Cook and stir on medium heat until the cream cheese melts. Add the coconut mixture and continue cooking until mixture is heated throughout. Add the beaten egg mixture and stir constantly until pudding thickens.

Pour into 4 small baking dishes and cool in refrigerator.

Makes 4 servings
Net carbs per serving: 5 g

This was at the restaurant at the hotel and it was labeled sugar free so who knows if it was totally sugar free.  It did not make me sick.

All of you are so supportive.  I think I'm just very down because I am in a very long stall.  I change it up, I change it down, nothing seems to help.  This is very typical of me.  While the weight is coming off I'm really motivated, it slows down and I start sabatoging myself.  I need to work real hard on this one.  Thank you so much for your kind comments and support.  I wish I knew all of you personally, in person, to give a hug.

Sue I love your new picture!

I know how I always responded to plateaus too in the past and I know this will be a struggle for me too.  I know you are not alone and will make it through this stall and lose some more.  It will be okay.......some lose fast and some lose slow....I try to remember this too when I get frustrated.
