Xpost - I LOVE Pancakes! There I've said it!
I accidently posted this on the main board, hope I don't get blasted by the purists!
Pre op they would make me feel sick and bloated after eating them, but that didn't stop me! LOL
I've toyed around with coconut flour / protein powder pancakes but they never came out just right. I finally found a GREAT low carb almond meal recipe.
It works best with finely ground almond meal, but can work with coarser ground, you just have to mix before you ladle into the pan.
I added a glog of Brown Sugar Da Vinci syrup and a little maple extract to the batter. I don't use enough coconut milk to make it worthwhile buying it canned, so I bought dried in a box and make it as I need it.
I also added 20 grams (just under a scoop of vanilla protein powder)
So my stats for the entire batch ended up being:
400 Calories
26.88 Fat
10 Carbs
3.3 Fiber
30.94 Protein
2.4 Sugar
Adding the Da Vinci and maple extract made it sweet enough that I didn't need to add SF syrup but you could if you want.
Generally I can get 6 or 7 pancakes from a batch and can only eat 3 or 4 depending how big they are.
My pancakes came out thinnish but much thicker than a crepe and OMdoG they are soooooooooooo yummy! I imagine you could make them into crepes very easily by adding a little more syrup or coconut milk and spreading them around the pan.
"Rick's Primal Pancakes
1 Egg
1/4 cup Almond Meal
1/4 cup of Coconut Milk
1/8 t Cinnamon
1/8 t Vanilla Extract
1t Baking Powder
Mix it all together until a batter forms.
Pour the batter onto a buttered or greased skillet. Cook over medium heat until both sides are golden brown. Serve with berries
I usually add 5-6 Toasted Pecan halves to the batter (toast them in a skillet first and then crumble them) - Yummy!!!! When I use pecans, I sometimes substitute maple extract/flavoring for the cinnamon and vanilla extract.
Makes one serving
The original pancakes WERE a bit on the thin side, but the baking powder that I added to the recipe above took care of that!"

I've used all my almond flour so can't try yours until I go to the health food store but last Sunday I made pancakes for the guys and with the last 1/8 c I added about 1/8c flax ground and 1/2 scoop protein powder and a little more water. Cooked it like a pancake and ate it with strawberries and SF syurp. Yumm.
